A complex nose combining plum, mulberry, ripe strawberry and brown spice with delicate floral and
violet notes. Tannins are firm and pleasingly supported with plump fruit and a rounded texture, giving
a good lengthy finish.Perfect with wild boar sausages, venison, roast lamb or gamey stews.Suitable for vegans.Suitable for vegetarians.Made from Nebbiolo grapes cultivated around the town of Barolo in southern Piemonte. These are
trained on a low Guyot trellis at a density 4-5,000 vines/ha. The grapes were hand-harvested, de stemmed and then crushed to small fermenters, for around 12 days, with daily pumping-over. This
ensures good colour and flavour extraction, but avoids over extraction of the abundant Nebbiolo
tannins. The wine was drained off at dryness, and the skins transferred to a small press. After pressing
the wine was settled for two days, and then racked to stainless steel tanks for malolactic fermentation.
After three years maturation in 50hl Slavonian oak casks it was racked and bottled.
A classic Chardonnay from Southern Burgundy - fine buttery and floral notes on the nose and a wine
of substance and finesse on the palate. Some creamy textural notes up front reveal the discreet
presence of oak, whilst on the finish there is some underlying minerality and a hint of citrus zestiness
that provides long lasting flavours.

average vine age of about 40 years. The soil is classic argilo-calcaire that suits Chardonnay so well
and that lends elegance and finesse to the final wines. 10% of the wine is barrel aged to give a more

lose their colour too quickly. The first 10cm of each barrel is filled with grapes which are crushed by
foot, the barrel is then topped up with whole bunches and fermentation starts naturally after 2-3 days.
Since yeasts are an expression of the individual vintage and vineyard, no artificial yeasts are used. 3-4
times a day the pulp is trodden by foot to further extract colour and flavour. The wines are left in open
top fermenters until the cap sinks then decanted into 20-30% well-toasted new oak (a small percentage
compared to most). After 15-20 months the wine is racked, blended and lightly fined. Wines are not
filtered but checked by candlelight, then bottled directly from barrel by hand on a cask by cask basis.

trusted Dão growers who follow sustainable practices in their
vineyards. The Dão region is on the raised Beirão pleateau and the
vineyards are at altitudes of around 450 metres above sea level.

the grapes undergo a slow ripening process and retain a fresh
acidity whilst accumulating great depth of flavour. Soils in the Dão

Mâconnais, where soils are varied but limestone is prevalent. Here Chardonnay ripens under a
Continental climate (typically cold winters followed by warm springs and almost Mediterranean sun in
the summer). Once ripe, picking is both by hand and machine. Machine harvesting has the advantage
of picking in the early hours of the morning before daylight when the temperature rises; hand picking
is gentler and keeps whole bunches intact. After pressing and static settling the must is cooled to
around 12°C to ensure a controlled fermentation. Once alcoholic fermentation is complete, wines are
left to winter and undergo malolactic fermentation. With enviable priority access to the cellar in
Mâcon-Charnay, Samantha tastes each individual tank (up to 20) to select a very personalised blend
for GENETIE 'Les Piliers', combining three essential elements - the florals, the exotic and the mineral.
The final blend is kept on fine lees until bottling, combining the warmth of southern Burgundy with
the elegance and finesse of the special terroir of Mâcon-Charnay-lès-Mâcon.
