Barolo 'Flori' Araldica Piemonte

Barolo 'Flori' Araldica Piemonte

A complex nose combining plum, mulberry, ripe strawberry and brown spice with delicate floral and violet notes. Tannins are firm and pleasingly supported with plump fruit and a rounded texture, giving a good lengthy finish.Perfect with wild boar sausages, venison, roast lamb or gamey stews.Suitable for vegans.Suitable for vegetarians.Made from Nebbiolo grapes cultivated around the town of Barolo in southern Piemonte. These are trained on a low Guyot trellis at a density 4-5,000 vines/ha. The grapes were hand-harvested, de stemmed and then crushed to small fermenters, for around 12 days, with daily pumping-over. This ensures good colour and flavour extraction, but avoids over extraction of the abundant Nebbiolo tannins. The wine was drained off at dryness, and the skins transferred to a small press. After pressing the wine was settled for two days, and then racked to stainless steel tanks for malolactic fermentation. After three years maturation in 50hl Slavonian oak casks it was racked and bottled.

Bourgogne Pinot Noir Vallet Freres France

Bourgogne Pinot Noir Vallet Freres France

A pretty, translucent ruby colour with earthy, strawberry fruit and a light pepperyness on the nose. Mouthwatering acidity balances the moderate gentle ripe tannins and elegant, pure, somewhat savoury red fruit. Serve with a traditionally Coq au Vin. Roast chicken or young game birds and equally good with pasta bakes or wild mushroom linguineSuitable for vegansSuitable for vegetariansThe grapes come into the winery as whole bunches because the Vallets believe that destalked wines lose their colour too quickly. The first 10cm of each barrel is filled with grapes which are crushed by foot, the barrel is then topped up with whole bunches and fermentation starts naturally after 2-3 days. Since yeasts are an expression of the individual vintage and vineyard, no artificial yeasts are used. 3-4 times a day the pulp is trodden by foot to further extract colour and flavour. The wines are left in open top fermenters until the cap sinks then decanted into 20-30% well-toasted new oak (a small percentage compared to most). After 15-20 months the wine is racked, blended and lightly fined. Wines are not filtered but checked by candlelight, then bottled directly from barrel by hand on a cask by cask basis.

Cabernet Sauvignon Gran Reserva Novas Maipo Chile Organic

Cabernet Sauvignon Gran Reserva Novas Maipo Chile Organic

Ruby red in colour. The nose is intense, with a pronounced presence of fruity aromas such as cherries and strawberries as well as truffle and chocolate. Medium bodied, well balanced, and delicate, with particularly smooth tannins and rich acidity, resulting in a juicy and very pleasing wine with a persistent finish.Ideal with meat-based dishes and stews. This wine shows a unique harmony with grilled blood sausage, slow-cooked beef, and pastas such as gnocchi with blue cheese. Serve at 18ºC in a Bordeauxstyle glass. The grapes for this wine come from organic vineyards of Los Morros and Los Robles in the Maipo Valley. Soils are alluvial, rich in minerals with good drainage and irrigated by water from the snow  thaw. The grapes were hand picked. The Maipo zone has ideal conditions for growing Cabernet Sauvignon. The Maipo River regulates the temperatures naturally and prevents frost and extremes of heat and cold. The spring of 2013 was slightly colder than the historic average, followed by a summer with high temperatures, which accelerated ripening and prevented the delays that were initially predicted for the 2014 harvest. Rainfall in the Maipo Valley was concentrated in the winter months and reached approximately 250 mm, which is well below the nearly 450 mm recorded during the 2012–2013 season. The grape reception area includes a double selection conveyor belt that allows selection first at the bunch level and again after destemming. Vinification begins with a 4–5-day prefermentation cold soak at 8ºC followed by alcoholic fermentation in stainless steel tanks with native yeasts at 26ºC and a pumpovers program determined by enological criteria. Malolactic fermentation takes place naturally in tanks and barrels, where the wine is aged at controlled temperatures for 12 months. It is neither fined nor stabilized; it is just lightly filtered with a 1-micron cartridge filter priorto bottling.Suitable for Vegetarians and Vegans. This wine is Organic.

Herdare do Peso Sossego Alentejo Tinto Portugal

Herdare do Peso Sossego Alentejo Tinto Portugal

Reduced to Clear. This wine is bright ruby red in colour. On the nose, generous aromas of strawberries and red cherries stand out, with spicy complexity coming from the oak ageing. It is vibrant and supple on the palate with elegant tannins, delicately balanced acidity and a lovely fresh finish. The Guedes family had always rated the quality of the Herdade do Peso grapes – they had been using them in their Vinha do Monte wines since the early 1990s – and jumped at the opportunity to purchase the estate in 1996. Situated in the south of the Alentejo, in the sub-region of Vidígueira, the Herdade do Peso estate covers a total of 457 hectares, 160 hectares of which are currently planted with vines. Winemaker Luís Cabral de Almeida makes expressive and generous wines that reflect the warmer climate of the Alentejo. VINEYARDS Despite its southerly location, Vidígueira is one of the cooler Alentejo sub-regions and benefits from cool Atlantic air funnelled inland from the coast by a gap in the surrounding mountains. Limestone soils help to control vine vigour and lend elegance to the wines. All of the Herdade do Peso vineyards are sustainably farmed and an on-site dam provides much-needed water to irrigate the vineyards during the Alentejo summers. VINIFICATION Following full destemming and gentle crushing, maceration and fermentation took place in stainless-steel tanks at a controlled temperature of 26ºC over a period of around eight days. After malolactic fermentation, the wine aged in second, third and fourth fill French oak barrels for around six months. It underwent a light fining and filtration before bottling.

Messmer Pinot Noir Spatburgunder, Pfalz, Germany

Messmer Pinot Noir Spatburgunder, Pfalz, Germany

Aromas of bright strawberry fruit. Fresh and juicy red berry characters on the palate with savoury and spice notes, all backed by supple tannins.Approximately 70% of the Pinot Noir is kept in stainless steel, whilst 30% spends 3-4 months in 500- 900 litre old oak barrels - for micro-oxygenation. Food match: Drink with crispy duck pancakes or char sui pork dishes.Weingut Messmer, in the Pfalz region, was founded by Herbert and Elizabeth Messmer in 1960. It's situated in Burrweiler, in the south-west of Germany, less than 50 miles from the border with France and to the north-west of Stuttgart. The yellow sandstone buildings had already been home to winemaking for around 250 years before they arrived. It's still in the family's hands today, with son Martin overseeing the estate alongside his brother Gregor, who supervises production in the vineyard and winery. Their vineyards cover 27 hectares, with around two-thirds of the area planted with white varieties (predominantly Riesling, Pinot Gris and Pinot Blanc) and the rest with red varieties (Pinot Noir in the main). The terroir is made up of seven different soil types: slate, red sandstone, granite, limestone, loam, sand and 'muschelkalk' - a calcareous soil with substantial deposits of fossilised mussel shells. Gregor works to preserve the health and mineral content of the soils - they use only organic fertilisers, and in 2011 they began the biodynamic cultivation of some sites. In the winery fermentations are cool, slow and small batch; grapes are only ever partially de-stemmed; and wines are bottled without fining and with only the gentlest filtration.
