Soils are alluvial, rich in minerals with good drainage and irrigated by water from the snow thaw. The grapes were hand picked. The Maipo zone has ideal conditions for growing Cabernet Sauvignon. The Maipo River regulates the temperatures naturally and prevents frost and extremes of heat and cold. The spring of 2013 was slightly colder than the historic average, followed by a summer with high temperatures, which accelerated ripening and prevented the delays that were initially predicted for the 2014 harvest. Rainfall in the Maipo Valley was concentrated in the winter months and reached approximately 250 mm, which is well below the nearly 450 mm recorded during the 2012–2013 season. The grape reception area includes a double selection conveyor belt that allows selection first at the bunch level and again after destemming. Vinification begins with a 4–5-day prefermentation cold soak at 8ºC followed by alcoholic fermentation in stainless steel tanks with native yeasts at 26ºC and a pumpovers program determined by enological criteria. Malolactic fermentation takes place naturally in tanks and barrels, where the wine is aged at controlled temperatures for 12 months. It is neither fined nor stabilized; it is just lightly filtered with a 1-micron cartridge filter priorto bottling.Suitable for Vegetarians and Vegans. This wine is Organic.

The entire zone has good drainage, high fertility, and tremendous agricultural aptitude, especially for red grape varieties such as Cabernet Sauvignon, Carmenère, and others. The Mediterranean climate has warm summers with broad daily oscillations between daytime and night time temperatures, and cold, rainy winters that allow for good vine development. The soils are of alluvial origin with moderate depth, and good for agriculture. The grapes were hand picked in mid- April and submitted to a week-long pre-fermentation cold soak at 8ºC (46ºF) to extract fresh fruit characteristics. Alcoholic fermentation took place at 25º–28ºC with daily pump-overs. The new wine remained on its skins for a period, after which the free run wine was separated from its skins and allowed to undergo malolactic fermentation naturally. Part of this wine was aged in oak barrels for 6 months and later reblended to achieve a more complex character.Suitable for Vegetarians and VegansThis wine is Organic.

Summers are hot but with cool night temperatures. The soils are medium to very deep, of alluvial origin, and have a silty-loam texture that allows for good vine development. The grapes were hand picked in late April and early May and submitted to a week-long pre-fermentation cold treatment at 8ºC (46ºF) to extract more fruit characteristics. Alcoholic fermentation took place at 25º–28ºC (77º–82ºF) with pumpovers determined by daily tastings through the end of the process. A post-fermentation maceration followed, and then the wine was devatted, separating the free-run wine from the skins. Chill to just below cellar temperature (about 10ºC). In summer, serve at the end
of the meal as a refreshing alternative or try as one of the few dessert wines to
match chocolateDuring the January following each vintage, Fonseca sets aside a reserve of very
concentrated, powerful vintage quality red ports, selected primarily from the firm’s
own quintas and judged according to their ageing potential. These are placed in cask
and cellared. Tawny ports of age are blended across several vintages to maintain
quality and continuity of style, and thus show an “apparent”, or average, age on the
label rather than a vintage date.
As tawny ports age, they grow lighter in colour, as they throw their deposit in
the cask rather than in the bottle. Moreover, Fonseca cellars its aged tawnies in
the Douro rather than in Vila Nova de Gaia; the considerable difference in heat
and humidity between these two areas lends Fonseca’s tawny ports of age a very
distinctive “baked” richness reminiscent of butterscotch.

Tawnys are a traditional after
dinner wine that can be savoured
with a platter of cheeses or a rich
fruit or chocolate dessert. Wine making: Fruit is allowed to stay on the vine
until very sweet and an intense
concentration of flavours has
developed. After crushing and
partial fermentation to retain some
sweetness, the wine is pressed and
then fortified with a neutral spirit
prior to maturation in small and large
format oak casks.
Cellaring: With an average age of 21 years,
Old Boys Barrel Aged Tawny can be
cellared for extended maturation in
bottle but is blended to be enjoyed
