Medium bodied, well balanced, and delicate, with particularly smooth tannins and rich acidity, resulting in a juicy and very pleasing wine with a persistent finish.Ideal with meat-based dishes and stews. This wine shows a unique harmony with grilled blood sausage, slow-cooked beef, and pastas such as gnocchi with blue cheese. Serve at 18ºC in a Bordeauxstyle glass.The grapes for this wine come from organic vineyards of Los Morros and Los Robles in the Maipo Valley. Soils are alluvial, rich in minerals with good drainage and irrigated by water from the snow thaw. The grapes were hand picked. The Maipo zone has ideal conditions for growing Cabernet Sauvignon. The Maipo River regulates the temperatures naturally and prevents frost and extremes of heat and cold. The spring of 2013 was slightly colder than the historic average, followed by a summer with high temperatures, which accelerated ripening and prevented the delays that were initially predicted for the 2014 harvest. Rainfall in the Maipo Valley was concentrated in the winter months and reached approximately 250 mm, which is well below the nearly 450 mm recorded during the 2012–2013 season. The grape reception area includes a double selection conveyor belt that allows selection first at the bunch level and again after destemming. Vinification begins with a 4–5-day prefermentation cold soak at 8ºC followed by alcoholic fermentation in stainless steel tanks with native yeasts at 26ºC and a pumpovers program determined by enological criteria. Malolactic fermentation takes place naturally in tanks and barrels, where the wine is aged at controlled temperatures for 12 months. It is neither fined nor stabilized; it is just lightly filtered with a 1-micron cartridge filter priorto bottling.Suitable for Vegetarians and Vegans.This wine is Organic.

Cabernet Sauvignon Hayes Ranch California USA
This Cabernet Sauvignon comes from select vineyards in California with warm days and cool nights. These vineyards are characterized by a long growing season which helps develop ripe and round fruit flavours. Each vineyard was harvested and fermented separately in upright stainless steel fermenters. Rack and return, which is the process of draining all of the free-run juice off the cap and then returning the free-run juice back over the top of the fermenter, was performed twice daily. This method increases colour and tannin extraction and improves the mouthfeel through the integration of oxygen. This wine was aged for 12 months in neutral oak. Flavours of red cherry, anise, and a hint of vanilla, abound in this Cabernet Sauvignon. This wine is well balanced with medium tannins, a smooth mid-palate and a spicy, coffee finish.

Alcoholic fermentation took place at 25º–28ºC with daily pump-overs. The new wine remained on its skins for a period, after which the free run wine was separated from its skins and allowed to undergo malolactic fermentation naturally. Smooth and medium bodied it has great balance and a lingering finish.The vineyard is located in Nashik, to the north of Mumbai in the Western Ghats Mountains. The vines are grown at approximately 600 metres above sea level. The climate here is mild in the winter with temperatures of approximately 10°C, rising to 35°C in the summer. Rainfall can be high. The vines are grown in red soils with gravel and clay, which has a high iron content and good drainage. deep purple wine with delicious notes of ripe blackberry and blueberry fruit, enlivened by a hint of black peppery spice and a touch of rich dark chocolate. Smooth and medium bodied on the palate, it shows great balance and a lingering finish.The grapes were cold soaked and then fermented in stainless steel tanks at controlled temperatures of between 25° to 30°C. During fermentation regular, gentle pump-overs took place to extract the desired levels of colour and flavour and to impart structure to the wine.
