trained on a low Guyot trellis at a density 4-5,000 vines/ha. The grapes were hand-harvested, de stemmed and then crushed to small fermenters, for around 12 days, with daily pumping-over. This
ensures good colour and flavour extraction, but avoids over extraction of the abundant Nebbiolo
tannins. The wine was drained off at dryness, and the skins transferred to a small press. After pressing
the wine was settled for two days, and then racked to stainless steel tanks for malolactic fermentation.
After three years maturation in 50hl Slavonian oak casks it was racked and bottled.

are being harvested for Noble One,
a parcel of fruit at approx 20-22
baume is selected to produce the
Black Noble intense and ripe botrytis
flavours. Very little fermentation
occurs before fortification with a
neutral grape spirit is added to
inhibit any further fermentation.
Black Noble is then clarified, a touch
of brandy spirit added for further
complexity before being transferred
into used Noble One barriques.
Cellaring: The wine has been aged in
barrel and is designed for current
consumption but will keep in the

exploit this coastal fruit by capturing a breezy finesse over the classic cranberry and wild strawberry
aromas giving us a wine with enough bite and texture to be foody but with enough generosity of fruit
to be a delicious glass on its own. A lick of oak in the winemaking lends a little soothing creaminess to

The remaining 75%was destemmed lightly crushed and then macerated and fermented normally at 25°C in stainless steel automated fermenters. Both wines were then seperately pressed and the noncarbonic maceration wine was lightly oaked for 2 months before blending.
This is a deep, ruby coloured, concentrated red blend shows prominent aromas of dark cherry, blackcurrant and vanilla. On the palate cinnamon, sweet spice and ripe, juicy dark fruit together with a firm tannin structure, ensures good length and an enduring finish.Grapes were harvested at optimal ripeness. After de-stem, they were cold soaked for
two days to extract more fruit character and enhance colour. The wine was inoculated
with specially selected yeast strains and fermented until dry. Free-run juice was racked
to barrel where it underwent malolactic fermentation. The wine was then racked from
the lees and returned to barrel for 18 months of maturation.

Salta. Surrounded by ancient and magnificent cacti, the vineyard age is 65 years vines produce approx.
15 tones/hectares. Harvest takes place by hand in three batches between end of January when just ripe;
2 weeks later when just right; and one week after that which adds complexity. Use of selected yeast.
Maceration in press with carbonic for 4 hours. Alcoholic fermentation for 25 days at a temperature
between 13 ºC & 15 ºC. Non spontaneous malolactic fermentation.
A rich full bodied wine made in Heathcote, South East Australia by De Bortoli. Deep purple in colour with a crimson hue and a bouquet of ripe blackberries and dark fruits complemented with mocha oak, hints of spicy pepper and liquorice. The palate is full and rich with plenty of ripe blackberry fruits and plums. Soft mouth filling flavours of mocha, spice and liquorice with a chocolaty finish.Great with pizza and pasta.
Aromas of lemon and grapefruit. Dry with good freshness on the palate, and a good richness of texture and distinct flavours. The grapes are harvested at night when it is cooler and vinified in stainless steel to retain freshness.Drink with vegetable risotto or grilled fish dishes.
An aged 10 year old Tawny Port with a light delicate palate. Rich tawny colour, with an excellent nose of nuts and hints of mature fruit. On the palate, beautifully rounded, with hints of dried fruits and a long elegant finish.Does not need decanting.Serve slightly chilled with cheeses, nuts or dried fruit after a meal or on its own.
A dark red coloured port with a seductive rich perfume of ripe plums and cherries. On the palate it is complex, with an excellent structure and a long lingering finish.Great when served at the end of a meal, with chocolate and rich chocolate desserts, nuts and cheese.Usually serve at room temperature but can also be served slightly chilled.Warrior is the oldest mark of Port in the world, having been shipped continuously since
the 1750’s. The name Warrior was branded on the cases of Warre’s Finest Reserve Ports
since the earliest days of the firm. The traditional style has been maintained over the
years and it is today a classic fullbodied wine with wonderful richness and balance.
Warrior is drawn from Warre’s finest Tuintas in the Pinhao and Rio Torto valleys that
produce Warre’s Vintage Ports. The firm’s head winemaker, Charles Symington, will select
vats of particularly rich and fruity Port to set aside for maturing in oak casks in the lodges
