It also goes very nicely with ripe cheeses, salami, ham, and pastrami. The Central Valley vitivinicultural zone extends from the Maipo Valley in the north to the Maule Valley in the south. The entire zone has good drainage, high fertility, and tremendous agricultural aptitude, especially for red grape varieties such as Cabernet Sauvignon, Carmenère, and others. The Mediterranean climate has warm summers with broad daily oscillations between daytime and night time temperatures, and cold, rainy winters that allow for good vine development. The soils are of alluvial origin with moderate depth, and good for agriculture. The grapes were hand picked in mid- April and submitted to a week-long pre-fermentation cold soak at 8ºC (46ºF) to extract fresh fruit characteristics. Alcoholic fermentation took place at 25º–28ºC with daily pump-overs. The new wine remained on its skins for a period, after which the free run wine was separated from its skins and allowed to undergo malolactic fermentation naturally. The climate is Mediterranean, and the area receives winds from the south and morning fog. Springs are frost-free, and summers are very warm, which encourages proper ripening. Summers are hot but with cool night temperatures. The soils are medium to very deep, of alluvial origin, and have a silty-loam texture that allows for good vine development. The grapes were hand picked in late April and early May and submitted to a week-long pre-fermentation cold treatment at 8ºC (46ºF) to extract more fruit characteristics. Alcoholic fermentation took place at 25º–28ºC (77º–82ºF) with pumpovers determined by daily tastings through the end of the process. A post-fermentation maceration followed, and then the wine was devatted, separating the free-run wine from the skins. A clear, bright pale yellow in colour, with refreshing citrus aromas of grapefruit and lime that intermingle with subtle tropical fruit aromas, especially pineapple, and a touch of herbs. On the palate,it is a balanced, fresh and fruity wine, with velvety texture and a persistent, enjoyable finish.Ideal for serving with fish and shellfish, cooked with creamy sauces or butter. Also it is perfect accompanying pasta with seafood sauces and as aperitif, served with different cheese and dried fruits. Casablanca Valley can be identified by its closeness to the Pacific Ocean, influenced by the coastal breeze, which moderates temperatures. The land is basically formed by hills that increase in height asit goes east towards the Coastal Mountain Range. It has an alluvial origin, with sandy textures of high permeability, poor and shallow, which causes the valley to have low yields, compared to others. Thetemperatures are colder and templates, causing a slower ripening in the fruit and, in consequence, great character in flavour and aroma, for white varieties like Chardonnay and Sauvignon Blanc. The grapescome from vineyards that are approximately 12 years old in the Casablanca estate, trellised in simple vertical shoot position, with an average yield of 12 tons/ha. They were hand-picked into bins duringthe first week of March when they had reached the ideal state of ripeness. The grapes were transported to our Nancagua winery for vinification in stainless steel tanks at low temperatures with selectedyeasts, pumpovers, and delicate lees stirring to reach the desired final result. The climatic characteristics of this valley include frost-free springs and warm summers that allow the grapes to ripen well. The Rapel Valley viticultural zone is located in Chile’s 6th Region, approximately 160 km (100 mi) south of Santiago and includes the sub-valleys of Cachapoal and Colchagua. The entire zone presents good drainage, high fertility, and tremendous agricultural aptitude. Its climate is sub-humid Mediterranean because the low, even hills of the Coastal Mountain Range to the west allow the cooling influence of the Pacific Ocean to penetrate the valley and moderate temperatures. It is highly influenced by the Pacific anticyclone, which results in a concentration of rainfall during the winter months. Precipitation averages 710 mm (28 in) per year. During the summer, the southern and south-western winds result in an ample temperature variation between daytime highs and night time lows. The maximum temperature in January reaches 32ºC (90ºF) and the annual average is 14ºC (57ºF). The grapes that went into this wine were handpicked in April, when the fruit had reached the desired level of ripeness. The fruit came from vineyards that are more than 22 years old the Totihue estate in Alto Cachapoal and the Los Pretiles estate in Alto Colchagua. The vines at both estates are vertically positioned and yield an average yield of 9 tons per hectare. Fermentation took place in stainless steel tanks with selected yeasts in our Maipo Valley winery. The process was carefully managed to maintain temperatures at 15º–17ºC (59º–63º), with gentle aeration and delicate lees stirring to reach the desired results. The wine was fined with bentonite and cold-stabilized before bottling to prevent tartaric precipitations in the bottle.

Light cherry red in colour leads to an elegant nose of red cherry and raspberry fruit with gentle spice notes from barrel aging. The palate is silky, fine and hugely inviting. The perfect partner for mushroom-parmesan risotto.The Casablanca Valley is influenced by its proximity to the Pacific Ocean and its coastal breezes that moderate temperatures. The area ranges from soft rolling hills to higher hills toward the Coastal Mountain range in the east. The poor, sandy loam soils are alluvial in origin, relatively shallow and very permeable, resulting in yields which are generally low in comparison with other Chilean valleys. Temperatures are much cooler here, allowing the grapes to ripen very slowly to produce rich flavoured wines. The Casablanca Valley is influenced by the Pacific Ocean and the Humboldt Current, resulting in constant humidity and average temperatures of 25ºC in the summer and 14ºC in the winter. The spring of 2015 was cooler than average and the relative humidity was higher. This caused uneven budbreak and later ripening. An increase in rainfall forced an earlier harvest in April. The grapes are harvested into 400-kg bins and transported to the winery, where first the clusters and then the grapes (after destemming) are selected on a conveyor belt. Once in the tank, they undergo a pre-fermentation maceration for 3 days, followed naturally by alcoholic fermentation with native yeasts. During this stage, temperatures are kept at 24-26º C, with a gentle pump-over routine. A 2-3-day post-fermentation maceration is then carried out. Malolactic fermentation occurs spontaneously in stainless steel tanks and barrels. The wine is filtered through 1-micron membranes and then bottled. 70% of the wine is aged for 6 months in French oak barrels.Suitable for Vegetarians and Vegans.This wine is Organic.
A fine and bright sparkling wine with a delicate creamy foam. Pale yellow in colour, with a complex bouquet with fruity notes that remind of peach, green apple with second notes of lemon. Best served at 7º–10ºCThe area around the San Antonio seaport is Chile´s most maritime wine region. The vineyards are distributed among three major sectors of the Coastal Mountain Range in Leyda, Lo Abarca, and Rosario, although newer areas are constantly appearing. The region´s mountainous geography, it is cool climate, and its distinctively thin and rocky soil, produce white wines known by its minerality and an intense acidity. Fundo Rosario vineyards are located 250m above sea level in the Lagunilla zone. The vines are clone 242, vertically positioned, drip irrigated, and primarily planted on hillsides. The mountainous topography of the region, its fresh climate and its particular rocky and thin soil, produce white wines famous for their minerality and intense acidity. The grapes are machine harvested at night to take advantage of the naturally low temperatures and transported to the winery, where they are deposited into a pneumatic press. After pressing, the must is decanted and prepared for alcoholic fermentation by adjusting the turbidity level to 100 NTU and inoculating the tank with selected yeasts. Fermentation begins at 15ºC and finished at 16º–17ºC. The tank is then chilled to aid in the decantation of the coarser lees, and after 2 days, the clean wine is racked to tanks for aging. During this time, its lees are maintained in suspension for 3 months, which encourages the development of fatty and aromatic compounds and delivery of greater complexity to the wine.
