The Maipo River regulates the temperatures naturally and prevents frost and extremes of heat and cold. The spring of 2013 was slightly colder than the historic average, followed by a summer with high temperatures, which accelerated ripening and prevented the delays that were initially predicted for the 2014 harvest. Rainfall in the Maipo Valley was concentrated in the winter months and reached approximately 250 mm, which is well below the nearly 450 mm recorded during the 2012–2013 season. The grape reception area includes a double selection conveyor belt that allows selection first at the bunch level and again after destemming. Vinification begins with a 4–5-day prefermentation cold soak at 8ºC followed by alcoholic fermentation in stainless steel tanks with native yeasts at 26ºC and a pumpovers program determined by enological criteria. Malolactic fermentation takes place naturally in tanks and barrels, where the wine is aged at controlled temperatures for 12 months. Purplish-red colour. Intensely fruity nose, with standout plum and redcurrant aromas and hints of toast and blackcurrants. Smooth, ripe, velvety tannins and good density. Also excellent paired with pastas such as rigatoni and ripe cheeses. The Colchagua Valley extends from San Fernando in the north to Chimbarongo in the south. The climate is Mediterranean, and the area receives winds from the south and morning fog. Springs are frost-free, and summers are very warm, which encourages proper ripening. Summers are hot but with cool night temperatures. The soils are medium to very deep, of alluvial origin, and have a silty-loam texture that allows for good vine development. The grapes were hand picked in late April and early May and submitted to a week-long pre-fermentation cold treatment at 8ºC (46ºF) to extract more fruit characteristics. Alcoholic fermentation took place at 25º–28ºC (77º–82ºF) with pumpovers determined by daily tastings through the end of the process. A post-fermentation maceration followed, and then the wine was devatted, separating the free-run wine from the skins. Malolactic fermentation took place naturally. 20% of the wine was aged in French oak for 6 months and then blended for a more complex character.Suitable for Vegetarians and Vegans.This wine is Organic.

Brewery is the inevitable outcome of two beer-loving scientists becoming

The brewery started life in a
domestic garage in Papworth Everard and we moved to much larger premises in

name from the windmill ('molino') that sits on the edge of the
vineyards where they produce their fruit. In contrast to other
windmills, which turn in windy conditions, this particular windmill is
"loco", the Spanish for crazy, as it turns only on calm, still days.
The vineyards are located at an altitude of 500 metres above sea
level. They are dry-farmed and the clay soil is poor, meaning that
the roots of the vines grow deep into the earth in their search for
minerals and nutrients. This helps to ensure healthy, ripe, full of
flavour grapes. The Monastrell vineyards are over 18 years old,
while the Syrah vines are slightly younger, averaging around 15
The grapes were gently crushed before being fermented and
macerated on their skins for 10 days at a controlled temperature
of 24-26ºC in stainless-steel tanks. After fermentation the wine was
aged very briefly in oak to round out the tannins. The delicate
grape processing preserved the natural fruit purity and freshness
that is so typical of the Molino Loco style.

The vineyards are distributed among three major sectors of the Coastal Mountain Range in Leyda, Lo Abarca, and Rosario, although newer areas are constantly appearing. The region´s mountainous geography, it is cool climate, and its distinctively thin and rocky soil, produce white wines known by its minerality and an intense acidity. Fundo Rosario vineyards are located 250m above sea level in the Lagunilla zone. The vines are clone 242, vertically positioned, drip irrigated, and primarily planted on hillsides. The mountainous topography of the region, its fresh climate and its particular rocky and thin soil, produce white wines famous for their minerality and intense acidity. The grapes are machine harvested at night to take advantage of the naturally low temperatures and transported to the winery, where they are deposited into a pneumatic press. After pressing, the must is decanted and prepared for alcoholic fermentation by adjusting the turbidity level to 100 NTU and inoculating the tank with selected yeasts. Fermentation begins at 15ºC and finished at 16º–17ºC. The tank is then chilled to aid in the decantation of the coarser lees, and after 2 days, the clean wine is racked to tanks for aging. During this time, its lees are maintained in suspension for 3 months, which encourages the development of fatty and aromatic compounds and delivery of greater complexity to the wine. The grapes are harvested at different
periods between September and October and taken immediately to the vinification
cellar where they are collected in stainless steel tanks. The flower must is
then pressed in an ultra-soft manner and extracted, which is conveyed to the
stainless-steel tanks and kept at a temperature not exceeding 14 °C for
decantation. The wine is then drawn off and the wine is transferred to
stainless steel tanks. The wine thus created is transferred to the sparkling
wine and bottling cellar where it is placed in autoclaves and added with sugar
and selected yeasts. The refermentation in the autoclave lasts about 40 days
after which the sparkling wine is bottled and the bottles are left to mature
for 30 days.
