Intense and deep coloured with aromas of nuts, honey and wood. The full and soft body has a complex flavours of walnuts, dried fruits, coffee and caramel. A unique and highly sophisticated artificial Estufa process is set up for the 5 year old wines, where temperatures rise to 45ºC before being allowed to cool. Ruby red in colour. The nose is intense, with a pronounced presence of fruity aromas such as cherries and strawberries as well as truffle and chocolate. Medium bodied, well balanced, and delicate, with particularly smooth tannins and rich acidity, resulting in a juicy and very pleasing wine with a persistent finish.Ideal with meat-based dishes and stews. This wine shows a unique harmony with grilled blood sausage, slow-cooked beef, and pastas such as gnocchi with blue cheese. Serve at 18ºC in a Bordeauxstyle glass.The grapes for this wine come from organic vineyards of Los Morros and Los Robles in the Maipo Valley. Soils are alluvial, rich in minerals with good drainage and irrigated by water from the snow thaw. The grapes were hand picked. The Maipo zone has ideal conditions for growing Cabernet Sauvignon. The Maipo River regulates the temperatures naturally and prevents frost and extremes of heat and cold. The spring of 2013 was slightly colder than the historic average, followed by a summer with high temperatures, which accelerated ripening and prevented the delays that were initially predicted for the 2014 harvest. Rainfall in the Maipo Valley was concentrated in the winter months and reached approximately 250 mm, which is well below the nearly 450 mm recorded during the 2012–2013 season. The grape reception area includes a double selection conveyor belt that allows selection first at the bunch level and again after destemming. Vinification begins with a 4–5-day prefermentation cold soak at 8ºC followed by alcoholic fermentation in stainless steel tanks with native yeasts at 26ºC and a pumpovers program determined by enological criteria. Malolactic fermentation takes place naturally in tanks and barrels, where the wine is aged at controlled temperatures for 12 months. It is neither fined nor stabilized; it is just lightly filtered with a 1-micron cartridge filter priorto bottling.Suitable for Vegetarians and Vegans.This wine is Organic.

Purplish-red colour. Intensely fruity nose, with standout plum and redcurrant aromas and hints of toast and blackcurrants. Smooth, ripe, velvety tannins and good density. Also excellent paired with pastas such as rigatoni and ripe cheeses. The Colchagua Valley extends from San Fernando in the north to Chimbarongo in the south. The climate is Mediterranean, and the area receives winds from the south and morning fog. Springs are frost-free, and summers are very warm, which encourages proper ripening. Summers are hot but with cool night temperatures. The soils are medium to very deep, of alluvial origin, and have a silty-loam texture that allows for good vine development. The grapes were hand picked in late April and early May and submitted to a week-long pre-fermentation cold treatment at 8ºC (46ºF) to extract more fruit characteristics. Alcoholic fermentation took place at 25º–28ºC (77º–82ºF) with pumpovers determined by daily tastings through the end of the process. A post-fermentation maceration followed, and then the wine was devatted, separating the free-run wine from the skins. Malolactic fermentation took place naturally. 20% of the wine was aged in French oak for 6 months and then blended for a more complex character.Suitable for Vegetarians and Vegans.This wine is Organic.

In contrast to other windmills, which turn in windy conditions, this particular windmill is "loco", the Spanish for crazy, as it turns only on calm, still days. VINEYARDS The vineyards are located at an altitude of 500 metres above sea level. They are dry-farmed and the clay soil is poor, meaning that the roots of the vines grow deep into the earth in their search for minerals and nutrients. This helps to ensure healthy, ripe, full of flavour grapes. The Monastrell vineyards are over 18 years old, while the Syrah vines are slightly younger, averaging around 15 years. VINIFICATION The grapes were gently crushed before being fermented and macerated on their skins for 10 days at a controlled temperature of 24-26ºC in stainless-steel tanks. After fermentation the wine was aged very briefly in oak to round out the tannins. Quality is determined by the grape varieties, by the age of the vines, their method of training and the density of planting. All these factors are officially converted into points, the sum of which determines the final classification of the property. Here, this sum exceeds 1200 points, ensuring it belongs to a select group of "Class A" properties. Summer was hot in 2004 followed by a wet September but finally more sun pushed up sugar levels before harvest. After harvest, old lagares (open granite tanks about 75cm high) are still used to make the best Ports with traditional foot treading of the grapes without any mechanical crushing. This Port was aged for a couple of years in wood and several years in bottle before release. It has the potential to age for around 25 years or more.
