Soils are alluvial, rich in minerals with good drainage and irrigated by water from the snow thaw. The grapes were hand picked. The Maipo zone has ideal conditions for growing Cabernet Sauvignon. The Maipo River regulates the temperatures naturally and prevents frost and extremes of heat and cold. The spring of 2013 was slightly colder than the historic average, followed by a summer with high temperatures, which accelerated ripening and prevented the delays that were initially predicted for the 2014 harvest. Rainfall in the Maipo Valley was concentrated in the winter months and reached approximately 250 mm, which is well below the nearly 450 mm recorded during the 2012–2013 season. The grape reception area includes a double selection conveyor belt that allows selection first at the bunch level and again after destemming. Vinification begins with a 4–5-day prefermentation cold soak at 8ºC followed by alcoholic fermentation in stainless steel tanks with native yeasts at 26ºC and a pumpovers program determined by enological criteria. Malolactic fermentation takes place naturally in tanks and barrels, where the wine is aged at controlled temperatures for 12 months. The climate is Mediterranean, and the area receives winds from the south and morning fog. Springs are frost-free, and summers are very warm, which encourages proper ripening. Summers are hot but with cool night temperatures. The soils are medium to very deep, of alluvial origin, and have a silty-loam texture that allows for good vine development. The grapes were hand picked in late April and early May and submitted to a week-long pre-fermentation cold treatment at 8ºC (46ºF) to extract more fruit characteristics. Alcoholic fermentation took place at 25º–28ºC (77º–82ºF) with pumpovers determined by daily tastings through the end of the process. A post-fermentation maceration followed, and then the wine was devatted, separating the free-run wine from the skins. Malolactic fermentation took place naturally. 20% of the wine was aged in French oak for 6 months and then blended for a more complex character.Suitable for Vegetarians and Vegans.This wine is Organic.

This cooler site is perfect for the slower maturation needed to produce fresh whites. Grapes are typically harvested between the end of August and the beginning of September. Chenin Blanc Sula Vineyards Nashik, India
The vineyard is located in Nashik, to the north of Mumbai in the Western Ghats Mountains. The vines are grown at approximately 600 metres above sea level, where warm days give way to cooler nights, resulting in ripe fruit with balancing natural acidity. The climate here is mild in the winter with temperatures of approximately 10°C, rising to 35°C in the summer. Rainfall can be high, nourishing the vines throughout the growing season. The vines are grown in red soils with gravel and clay, which has a high iron content and offers good drainage.The grapes were gently whole bunch pressed. The must was slowly fermented for 25 to 30 days at controlled temperatures in stainless steel tanks, retaining the purity of fruit of the Chenin Blanc grapes. The wine was left to settle for approximately two months.Aromas of green apple and pear combine with tropical fruit flavours and mineral undertones. A notable acidity and hint of white pepper give this wine refreshing character.
