Intense and deep coloured with aromas of nuts, honey and wood. The full and soft body has a complex flavours of walnuts, dried fruits, coffee and caramel. Full bodied with a very lengthy finish.Superb after dinner or with chocolate desserts.Madeira is a fortified wine that depends upon heat and evaporation to create consistent long lasting styles. The must is fortified, either to arrest fermentation for a Malmsey or a Bual, or later in the fermentation process, in the case of Sercial or Verdelho before undergoing its own very special maturation. The Canteiro process is employed for all 10 and 15 year old Madeiras from H&H where the wine is heated naturally in barrels over some months to enhance concentration and consistency of the wine. This wine shows a unique harmony with grilled blood sausage, slow-cooked beef, and pastas such as gnocchi with blue cheese. Serve at 18ºC in a Bordeauxstyle glass.The grapes for this wine come from organic vineyards of Los Morros and Los Robles in the Maipo Valley. Soils are alluvial, rich in minerals with good drainage and irrigated by water from the snow  thaw. The grapes were hand picked. The Maipo zone has ideal conditions for growing Cabernet Sauvignon. The Maipo River regulates the temperatures naturally and prevents frost and extremes of heat and cold. The spring of 2013 was slightly colder than the historic average, followed by a summer with high temperatures, which accelerated ripening and prevented the delays that were initially predicted for the 2014 harvest. Rainfall in the Maipo Valley was concentrated in the winter months and reached approximately 250 mm, which is well below the nearly 450 mm recorded during the 2012–2013 season. The grape reception area includes a double selection conveyor belt that allows selection first at the bunch level and again after destemming. Vinification begins with a 4–5-day prefermentation cold soak at 8ºC followed by alcoholic fermentation in stainless steel tanks with native yeasts at 26ºC and a pumpovers program determined by enological criteria. Malolactic fermentation takes place naturally in tanks and barrels, where the wine is aged at controlled temperatures for 12 months. It is neither fined nor stabilized; it is just lightly filtered with a 1-micron cartridge filter priorto bottling.Suitable for Vegetarians and Vegans.This wine is Organic.

The climate is Mediterranean, and the area receives winds from the south and morning fog. Springs are frost-free, and summers are very warm, which encourages proper ripening. Summers are hot but with cool night temperatures. The soils are medium to very deep, of alluvial origin, and have a silty-loam texture that allows for good vine development. The grapes were hand picked in late April and early May and submitted to a week-long pre-fermentation cold treatment at 8ºC (46ºF) to extract more fruit characteristics. Alcoholic fermentation took place at 25º–28ºC (77º–82ºF) with pumpovers determined  by daily tastings through the end of the process. A post-fermentation maceration followed, and then the wine was devatted, separating the free-run wine from the skins. Malolactic fermentation took place naturally. 20% of the wine was aged in French oak for 6 months and then blended for a more complex character.Suitable for Vegetarians and Vegans.This wine is Organic.

In contrast to other windmills, which turn in windy conditions, this particular windmill is "loco", the Spanish for crazy, as it turns only on calm, still days. VINEYARDS The vineyards are located at an altitude of 500 metres above sea level. They are dry-farmed and the clay soil is poor, meaning that the roots of the vines grow deep into the earth in their search for minerals and nutrients. This helps to ensure healthy, ripe, full of flavour grapes. The Monastrell vineyards are over 18 years old, while the Syrah vines are slightly younger, averaging around 15 years. VINIFICATION The grapes were gently crushed before being fermented and macerated on their skins for 10 days at a controlled temperature of 24-26ºC in stainless-steel tanks. The wine is fresh and vibrant on the nose with fresh pear, white nectarine and grapefruit aromas leaping out of the glass with a hint of honeysuckle present. The palate is fresh, clean and refreshing having flavours that are complimentary to the aromas as well as a distinct Meyer lemon character. The grapes are harvested at night and it was fermented in stainless steel to retain the freshness of the varietal. Goes well with whole baby snapper grilled on the bbq or coconut poached chicken with mango and wild rice salad.Suitable for vegans.Suitable for vegetarians
