Bourgogne Pinot Noir Vallet Freres France

Bourgogne Pinot Noir Vallet Freres France

A pretty, translucent ruby colour with earthy, strawberry fruit and a light pepperyness on the nose. Mouthwatering acidity balances the moderate gentle ripe tannins and elegant, pure, somewhat savoury red fruit. Serve with a traditionally Coq au Vin. Roast chicken or young game birds and equally good with pasta bakes or wild mushroom linguineSuitable for vegansSuitable for vegetariansThe grapes come into the winery as whole bunches because the Vallets believe that destalked wines lose their colour too quickly. The first 10cm of each barrel is filled with grapes which are crushed by foot, the barrel is then topped up with whole bunches and fermentation starts naturally after 2-3 days. Since yeasts are an expression of the individual vintage and vineyard, no artificial yeasts are used. 3-4 times a day the pulp is trodden by foot to further extract colour and flavour. The wines are left in open top fermenters until the cap sinks then decanted into 20-30% well-toasted new oak (a small percentage compared to most). After 15-20 months the wine is racked, blended and lightly fined. Wines are not filtered but checked by candlelight, then bottled directly from barrel by hand on a cask by cask basis.

Herdare do Peso Sossego Alentejo Tinto Portugal

Herdare do Peso Sossego Alentejo Tinto Portugal

This wine is bright ruby red in colour. On the nose, generous aromas of strawberries and red cherries stand out, with spicy complexity coming from the oak ageing. It is vibrant and supple on the palate with elegant tannins, delicately balanced acidity and a lovely fresh finish. The Guedes family had always rated the quality of the Herdade do Peso grapes – they had been using them in their Vinha do Monte wines since the early 1990s – and jumped at the opportunity to purchase the estate in 1996. Situated in the south of the Alentejo, in the sub-region of Vidígueira, the Herdade do Peso estate covers a total of 457 hectares, 160 hectares of which are currently planted with vines. Winemaker Luís Cabral de Almeida makes expressive and generous wines that reflect the warmer climate of the Alentejo. VINEYARDS Despite its southerly location, Vidígueira is one of the cooler Alentejo sub-regions and benefits from cool Atlantic air funnelled inland from the coast by a gap in the surrounding mountains. Limestone soils help to control vine vigour and lend elegance to the wines. All of the Herdade do Peso vineyards are sustainably farmed and an on-site dam provides much-needed water to irrigate the vineyards during the Alentejo summers. VINIFICATION Following full destemming and gentle crushing, maceration and fermentation took place in stainless-steel tanks at a controlled temperature of 26ºC over a period of around eight days. After malolactic fermentation, the wine aged in second, third and fourth fill French oak barrels for around six months. It underwent a light fining and filtration before bottling.

Monastrell Molino Loco Murcia Spain

Monastrell Molino Loco Murcia Spain

This wine is a beautiful deep and vibrant red colour, with purple hues on the rim. On the nose, it shows elegant ripe red plum and cherry notes. The palate is very well structured, with soft tannins and a delicate, fruity finish.Suitable for vegetariansSuitable for vegansMolino Loco is made by the Castaño family in Yecla and takes its name from the windmill ('molino') that sits on the edge of the vineyards where they produce their fruit. In contrast to other windmills, which turn in windy conditions, this particular windmill is "loco", the Spanish for crazy, as it turns only on calm, still days. VINEYARDS The vineyards are located at an altitude of 500 metres above sea level. They are dry-farmed and the clay soil is poor, meaning that the roots of the vines grow deep into the earth in their search for minerals and nutrients. This helps to ensure healthy, ripe, full of flavour grapes. The Monastrell vineyards are over 18 years old, while the Syrah vines are slightly younger, averaging around 15 years. VINIFICATION The grapes were gently crushed before being fermented and macerated on their skins for 10 days at a controlled temperature of 24-26ºC in stainless-steel tanks. After fermentation the wine was aged very briefly in oak to round out the tannins. The delicate grape processing preserved the natural fruit purity and freshness that is so typical of the Molino Loco style.

Pinot Noir Gran Reserva Novas Casablanca Chile Organic

Pinot Noir Gran Reserva Novas Casablanca Chile Organic

Light cherry red in colour leads to an elegant nose of red cherry and raspberry fruit with gentle spice notes from barrel aging. The palate is silky, fine and hugely inviting. Delicious ripe summer fruit character is perfectly balanced by soft tannins and refreshing acidity. It has a long and elegant finish.Very good with white meats and oily fish. The perfect partner for mushroom-parmesan risotto. The Casablanca Valley is influenced by its proximity to the Pacific Ocean and its coastal breezes that moderate temperatures. The area ranges from soft rolling hills to higher hills toward the Coastal  Mountain range in the east. The poor, sandy loam soils are alluvial in origin, relatively shallow and very permeable, resulting in yields which are generally low in comparison with other Chilean valleys.  Temperatures are much cooler here, allowing the grapes to ripen very slowly to produce rich flavoured wines. The Casablanca Valley is influenced by the Pacific Ocean and the Humboldt Current, resulting in constant humidity and average temperatures of 25ºC in the summer and 14ºC in the winter. The spring of 2015 was cooler than average and the relative humidity was higher. This caused uneven budbreak and later ripening. An increase in rainfall forced an earlier harvest in April. The grapes are harvested into 400-kg bins and transported to the winery, where first the clusters and then the grapes (after destemming) are selected on a conveyor belt. Once in the tank, they undergo a pre-fermentation maceration for 3 days, followed naturally by alcoholic fermentation with native yeasts. During this stage, temperatures are kept at 24-26º C, with a gentle pump-over routine. A 2-3-day post-fermentation maceration is then carried out. Malolactic fermentation occurs spontaneously in stainless steel tanks and barrels. The wine is filtered through 1-micron membranes and then bottled. 70% of the wine is aged for 6 months in French oak barrels.Suitable for Vegetarians and Vegans. This wine is Organic.
