The Canteiro process is employed for all 10 and 15 year old Madeiras from H&H where the wine is heated naturally in barrels over some months to enhance concentration and consistency of the wine. A spicy rich Madeira with a mellow, ripe finish - sometimes described as liquid christmas pudding. Intense aromas of dried fruits, including figs and walnuts. It is full of rich spices and caramel notes.Delicious on its own or also ideal with desserts such as ice cream or fruit salads.This 5 Year Old Madeira starts life as fermenting must and is then fortified before undergoing its own very special maturation process. Made of predominantly Tinta Negra Mole Grapes, harvest begins from mid-August due to the warm southerly climate. A unique and highly sophisticated artificial Estufa process is set up for the 5 year old wines, where temperatures rise to 45ºC before being allowed to cool. This process takes 90 days and renders the wine completely stable. It is then aged in oak casks for 5 years, prior to bottling.

Tannins are firm and pleasingly supported with plump fruit and a rounded texture, giving a good lengthy finish.Perfect with wild boar sausages, venison, roast lamb or gamey stews.Suitable for vegans.Suitable for vegetarians.Made from Nebbiolo grapes cultivated around the town of Barolo in southern Piemonte. These are trained on a low Guyot trellis at a density 4-5,000 vines/ha. The grapes were hand-harvested, de stemmed and then crushed to small fermenters, for around 12 days, with daily pumping-over. This ensures good colour and flavour extraction, but avoids over extraction of the abundant Nebbiolo tannins. The wine was drained off at dryness, and the skins transferred to a small press. After pressing the wine was settled for two days, and then racked to stainless steel tanks for malolactic fermentation. After three years maturation in 50hl Slavonian oak casks it was racked and bottled.

A deep, luscious, medium rich Madeira; tangy with crisp fruit, excellent with dessert and cheeses. Blandy's Duke of Cumberland is fined and does not require decanting. It is a superb accompaniment to dessert dishes, especially fruit, cakes, milk chocolate or custard puddings and soft cheeses. It has been bottled when ready for drinking and will keep for several months after opening. VINEYARDS Various quality vineyards grown at between 200m and 400m on the north of the island near São Vicente. VINIFICATION Blandy's Duke of Cumberland underwent fermentation on the skins with natural yeast at between 24°C - 26°C C in temperature controlled stainless steel tanks. After approximately 3 days, fortification with grape brandy takes place, arresting fermentation at the desired degree of sweetness. MATURATION Blandy's Duke of Cumberland was transferred to 'estufa' tanks where the wine underwent a cyclic heating and cooling process between 45°C and 50°C over a period of 3 months. After 'estufagem' the wine was aged for three years in American oak casks and then underwent racking and fining before the blend was assembled and bottled.

Winemaker Luís Cabral de Almeida makes expressive and generous wines that reflect the warmer climate of the Alentejo. VINEYARDS Despite its southerly location, Vidígueira is one of the cooler Alentejo sub-regions and benefits from cool Atlantic air funnelled inland from the coast by a gap in the surrounding mountains. Limestone soils help to control vine vigour and lend elegance to the wines. All of the Herdade do Peso vineyards are sustainably farmed and an on-site dam provides much-needed water to irrigate the vineyards during the Alentejo summers. VINIFICATION Following full destemming and gentle crushing, maceration and fermentation took place in stainless-steel tanks at a controlled temperature of 26ºC over a period of around eight days. In contrast to other windmills, which turn in windy conditions, this particular windmill is "loco", the Spanish for crazy, as it turns only on calm, still days. VINEYARDS The vineyards are located at an altitude of 500 metres above sea level. They are dry-farmed and the clay soil is poor, meaning that the roots of the vines grow deep into the earth in their search for minerals and nutrients. This helps to ensure healthy, ripe, full of flavour grapes. The Monastrell vineyards are over 18 years old, while the Syrah vines are slightly younger, averaging around 15 years. The perfect partner for mushroom-parmesan risotto.The Casablanca Valley is influenced by its proximity to the Pacific Ocean and its coastal breezes that moderate temperatures. The area ranges from soft rolling hills to higher hills toward the Coastal  Mountain range in the east. The poor, sandy loam soils are alluvial in origin, relatively shallow and very permeable, resulting in yields which are generally low in comparison with other Chilean valleys.  Temperatures are much cooler here, allowing the grapes to ripen very slowly to produce rich flavoured wines. The Casablanca Valley is influenced by the Pacific Ocean and the Humboldt Current, resulting in constant humidity and average temperatures of 25ºC in the summer and 14ºC in the winter. The spring of 2015 was cooler than average and the relative humidity was higher. This caused uneven budbreak and later ripening. An increase in rainfall forced an earlier harvest in April. The grapes are harvested into 400-kg bins and transported to the winery, where first the clusters and then the grapes (after destemming) are selected on a conveyor belt. Once in the tank, they undergo a pre-fermentation maceration for 3 days, followed naturally by alcoholic fermentation with native yeasts. During this stage, temperatures are kept at 24-26º C, with a gentle pump-over routine. A 2-3-day post-fermentation maceration is then carried out. Malolactic fermentation occurs spontaneously in stainless steel tanks and barrels. The wine is filtered through 1-micron membranes and then bottled. 70% of the wine is aged for 6 months in French oak barrels.Suitable for Vegetarians and Vegans.This wine is Organic.

Full-bodied and loaded with fruit, this single quinta Port has layers of black cherry, dark bramble fruits, grippy tannins and vibrant acidity. 2004 is widely regarded as a fine vintage for Single Quinta Ports.An unfiltered Port, so decant, and serve with well-matured blue cheese.Suitable for vegansSuitable for vegetariansWiese & Krohn's estate Quinta do Retiro Novo is located in Sarzedinho, a small village in the Rio Torto valley. Quality is determined by the grape varieties, by the age of the vines, their method of training and the density of planting. All these factors are officially converted into points, the sum of which determines the final classification of the property. Here, this sum exceeds 1200 points, ensuring it belongs to a select group of "Class A" properties. Summer was hot in 2004 followed by a wet September but finally more sun pushed up sugar levels before harvest. After harvest, old lagares (open granite tanks about 75cm high) are still used to make the best Ports with traditional foot treading of the grapes without any mechanical crushing. This Port was aged for a couple of years in wood and several years in bottle before release. It has the potential to age for around 25 years or more.
