This Cabernet Merlot is deep purple in colour, an intensely fruity wine with cherry on the nose, followed by flavours of blackcurrant and ripe red berry on the palate. The entire zone has good drainage, high fertility, and tremendous agricultural aptitude, especially for red grape varieties such as Cabernet Sauvignon, Carmenère, and others. The Mediterranean climate has warm summers with broad daily oscillations between daytime and night time temperatures, and cold, rainy winters that allow for good vine development. The soils are of alluvial origin with moderate depth, and good for agriculture. The grapes were hand picked in mid- April and submitted to a week-long pre-fermentation cold soak at 8ºC (46ºF) to extract fresh fruit characteristics. Alcoholic fermentation took place at 25º–28ºC with daily pump-overs. The new wine remained on its skins for a period, after which the free run wine was separated from its skins and allowed to undergo malolactic fermentation naturally. Part of this wine was aged in oak barrels for 6 months and later reblended to achieve a more complex character.Suitable for Vegetarians and VegansThis wine is Organic.

Summers are hot but with cool night temperatures. The soils are medium to very deep, of alluvial origin, and have a silty-loam texture that allows for good vine development. The grapes were hand picked in late April and early May and submitted to a week-long pre-fermentation cold treatment at 8ºC (46ºF) to extract more fruit characteristics. Alcoholic fermentation took place at 25º–28ºC (77º–82ºF) with pumpovers determined by daily tastings through the end of the process. A post-fermentation maceration followed, and then the wine was devatted, separating the free-run wine from the skins. The Côtes du Rhône is made from various types of soils, but mostly from limestone terraces with sand and red clay. The colour is purple tinged garnet. The palate is full bodied, supple and well balanced with a long finish.Just before harvest the grapes, when the grapes are fully mature and are ready to be picked, the stems of the bunches are twisted so that no further nourishment reaches the grapes, thus inducing a natural drying of the grapes on the vine. The bunches are left for about 12 days and lose approximately 25 - 30% of their weight in water, concentrating their flavours before harvest.Perfect with roast red meats and mature cheeses.
