Black Noble Premium Dessert Wine De Bortoli Riverina 50cl
Amber colour with olive green hues. The nose has hints of toffee and coffee with raisins and mandarin peel. Unique and delicious flavours of rich raisin and dried date fruit with hints of citrus peel and caramel flavours. Concentrated and viscous with lingering aged complexity. The wine is aged in barrels for over 10 years.Suggested Cuisine Enjoy with Christmas pudding or sticky date pudding. Try poured over vanilla ice cream or with a cheese platter after dinner. General Characteristics Sweet / Medium bodied. Winemaking: When the botrytised Semillon grapes are being harvested for Noble One, a parcel of fruit at approx 20-22 baume is selected to produce the Black Noble intense and ripe botrytis flavours. Very little fermentation occurs before fortification with a neutral grape spirit is added to inhibit any further fermentation. Black Noble is then clarified, a touch of brandy spirit added for further complexity before being transferred into used Noble One barriques. Cellaring: The wine has been aged in barrel and is designed for current consumption but will keep in the bottle for several years. So far Black Noble has won over 60 awards and medals in various wine competitions.

The tannins are ripe and providewelcome grip and combined delicious acidity, leads to a balanced finish.FOOD MATCHThis wine is ideal with well-seasoned, strong-flavoured dishes, such as pasta with Bolognese sauce, stuffed cannelloni, grilled beef, pork, or poultry. It also goes very nicely with ripe cheeses, salami, ham, and pastrami. The Central Valley vitivinicultural zone extends from the Maipo Valley in the north to the Maule Valley in the south. The entire zone has good drainage, high fertility, and tremendous agricultural aptitude, especially for red grape varieties such as Cabernet Sauvignon, Carmenère, and others. The Mediterranean climate has warm summers with broad daily oscillations between daytime and night time temperatures, and cold, rainy winters that allow for good vine development. The soils are of alluvial origin with moderate depth, and good for agriculture. The grapes were hand picked in mid- April and submitted to a week-long pre-fermentation cold soak at 8ºC (46ºF) to extract fresh fruit characteristics. Alcoholic fermentation took place at 25º–28ºC with daily pump-overs. The new wine remained on its skins for a period, after which the free run wine was separated from its skins and allowed to undergo malolactic fermentation naturally. Part of this wine was aged in oak barrels for 6 months and later reblended to achieve a more complex character.Suitable for Vegetarians and VegansThis wine is Organic.

This wine combines delicious red cherry and dried cranberry concentration, with a touch of dark spice. The palate has wild bramble and cherry pie notes. It finishes bright, fresh and gently toasty.Fruit is sourced from a vineyard in Monterey, California’s Central Coast region and sit next to a chain of hills which separate the vineyards from the Pacific coast. The site benefits from the cooling breezes from the Pacific and as such lends itself to Pinot Noir. Fruit is destemmed before undergoing a period of cold maceration. The altitude here is around 250 m, with soil rich in iron oxide and loess on fractured limestone bedrock.25% of the grapes were transfered directly into 1000 Kg bins without being destemmed then sealed and put through a carbonic macceration fermentation for 10 days in order to produce the strawberry fruit part of the blend. The remaining 75%was destemmed lightly crushed and then macerated and fermented normally at 25°C in stainless steel automated fermenters. Both wines were then seperately pressed and the noncarbonic maceration wine was lightly oaked for 2 months before blending.

This is a deep, ruby coloured, concentrated red blend shows prominent aromas of dark cherry, blackcurrant and vanilla. On the palate cinnamon, sweet spice and ripe, juicy dark fruit together with a firm tannin structure, ensures good length and an enduring finish.Grapes were harvested at optimal ripeness. After de-stem, they were cold soaked for two days to extract more fruit character and enhance colour. The wine was inoculated with specially selected yeast strains and fermented until dry. Free-run juice was racked to barrel where it underwent malolactic fermentation. The wine was then racked from the lees and returned to barrel for 18 months of maturation.
