Taboexa is a 13ha estate at 300m above sea level, with sandy and granitic soil typical of the region. The Arantei estate is at just 30m above sea level - with clay and pebbly soil. Harvest typically begins in the middle of September - grapes are hand harvested and collected in 20 kilo crates. 70% of the grapes are macerated before pressing for 6 hours at a controlled temperature. Fermentation takes place in stainless steel using natural yeasts, and maturation on the lees is also in stainless steel. The mineral and fruity character from the Arantei grapes is balanced by the freshness of the Taboexa grapes.
Rich and long with greater depth and complexity than a standard Fino. Appealing salty tang and a long citrus finish. Very fresh and pure.This should be served cool, but not very cold. It pairs well with smoked fish, Spanish charcuterie and mature cheeses. The soil type is Albariza. Picking takes place in early September. The wine is made from the first pressing of grapes to give a light fresh style. Fermentation takes place at relatively high temperatures to reduce fruit flavour. This makes a very neutral wine which is perfect for the production of sherry. The wine then undergoes natural malolactic fermentation, converting harsh malic acid to softer lactic acid. In the February after harvest, the wine is fortified with grape brandy up to 15% abv. Once at this stage the wine is then added to the youngest Criadera in the Solera. The wine then begins its ageing process under flor, a special type of yeast. Antique Fino is carefully selected from the classic fino and is aged for a further 4 years without any movements, except for monitoring the condition of the Flor yeast. The wine is fortified again, prior to bottling and this time, to 17% Alcohol.

Black Noble is then clarified, a touch
of brandy spirit added for further
complexity before being transferred
into used Noble One barriques.
Cellaring: The wine has been aged in
barrel and is designed for current
consumption but will keep in the
bottle for several years. So far Black Noble has won over 60 awards and medals in various wine competitions.

The name Los Cardos comes from the thistle: the sign of a good harvest. This
wine represents just that, a fantastic example of Chardonnay from Mendoza in
Argentina. Golden in colour, it is fresh with tropical flavours such as mango,
pineapple and peach, and undertones of citrus and minerality.The grapes are harvested from the third week of February to the first week of
March. A moderate protective destemming and a crushing at room temperature
are carried out.

A clear, bright pale yellow in colour, with refreshing citrus aromas of grapefruit and lime that intermingle with subtle tropical fruit aromas, especially pineapple, and a touch of herbs. Casablanca Valley can be identified by its closeness to the Pacific Ocean, influenced by the coastal breeze, which moderates temperatures. The land is basically formed by hills that increase in height asit goes east towards the Coastal Mountain Range. It has an alluvial origin, with sandy textures of high permeability, poor and shallow, which causes the valley to have low yields, compared to others. Thetemperatures are colder and templates, causing a slower ripening in the fruit and, in consequence, great character in flavour and aroma, for white varieties like Chardonnay and Sauvignon Blanc. The grapescome from vineyards that are approximately 12 years old in the Casablanca estate, trellised in simple vertical shoot position, with an average yield of 12 tons/ha. They were hand-picked into bins duringthe first week of March when they had reached the ideal state of ripeness. The grapes were transported to our Nancagua winery for vinification in stainless steel tanks at low temperatures with selectedyeasts, pumpovers, and delicate lees stirring to reach the desired final result. Prior to bottling the wine was fined with adjusted doses of bentonite and cold stabilized to prevent tartaric precipitations in thebottle.Suitable for Vegetarians and VegansThis wine is Organic.

This wine is made from Koshu, Japan’s indigenous wine grape which can be traced back to 1186 when it was discovered growing wild at Katsunama in Yamanashi prefecture.Pale yellow colour. The vineyards are southwest facing and situated at altitudes of between 250 and 400m. The Piemonte low Guyot trellis system is used for the vines, which grow in a limestone-clay soil. Planting density is 4000 to 4500 vines per hectare. Grapes are hand harvested in the last week of September. Temperature controlled fermentation takes place in stainless steel (16- 18ºC) and the wine spends a couple of months on lees.

This refreshing, aromatic wine has wonderful aromas of fresh limes and ripe

favourite seafood and pasta dishes. The fruit for this wine was grown in four Wairarapa vineyards, each with
differing soils. One is stony loams, from which this wine is predominantly
produced, while the others are a mixture of silt loams and hillside clays. This
variety provides different flavour profiles, which helps us to increase the
complexity of the finished wine. These vines are relatively young, and are
cropped at low yield levels to give intensely flavoured grapes.
The focus in the winery is to capture the pure fruit flavours that come from the
vineyard, whilst adding complexity through our winemaking efforts to produce
a multi-dimensional wine. This is achieved by tank fermenting the juice using
yeasts that are able to ferment at low temperatures – preserving the essential

Maceration in press with carbonic for 4 hours. Alcoholic fermentation for 25 days at a temperature
between 13 ºC & 15 ºC. Non spontaneous malolactic fermentation.
