Sauv. is sourced from Jack Kay’s vineyard in Bool Lagoon (located between Coonawarra and Wrattonbully) and from Brett Williams’ vineyard in southern Coonawarra. The terra rossa soils and cool climate of these vineyards make them the perfect partners for growing high quality Cabernet. The cool climate of the Limestone Coast growing region (located in the South-East corner of South Australia), combined with a diverse array of sub-regions, makes this the perfect fruit source for our Limestone Coast Selections range of wines. Deep ruby red with fantastically expressive aromas of cherries, cedar wood, rosemary and cloves. A rich savoury palate with lots of Morello cherry and blackberry flavours, some earthy spice and fine tannins. A wine packed with flavour and heritage. Food match: Perfect with rich, lamb casseroles or a spicy chickpea harissa stewSuitable for vegans.Suitable for vegetarians.A blend of Cabernet Sauvignon (40%), Syrah (40%), Cinsault (15%) and Carignan (5%) Grapes are grown on 15-20 year old vines on sandy limestone, with clay sub-soils. All four varietals were hand harvested and fermented in concrete vats for 10 days. Malolactic fermentation begins spontaneously, after which the wine was blended and then aged for 16 months in concrete vats.

An intense purplish red coloured wine with deep aromatic notes of juicy plum, fresh violets and roses and a hint of cedar. In the mouth, it is medium bodied and round in texture with plush, raspberry, vanilla and violet notes. This leads to soft tannins and a persistent finish.
