Intense and deep coloured with aromas of nuts, honey and wood. The full and soft body has a complex flavours of walnuts, dried fruits, coffee and caramel. Full bodied with a very lengthy finish.Superb after dinner or with chocolate desserts.Madeira is a fortified wine that depends upon heat and evaporation to create
consistent long lasting styles. The must is fortified, either to arrest fermentation
for a Malmsey or a Bual, or later in the fermentation process, in the case of
Sercial or Verdelho before undergoing its own very special maturation. The
Canteiro process is employed for all 10 and 15 year old Madeiras from H&H
where the wine is heated naturally in barrels over some months to enhance
concentration and consistency of the wine. Malmsey produces a rich sweet style
whilst still exhibiting delicious mouthwatering acidity.
A spicy rich Madeira with a mellow, ripe finish - sometimes described as liquid christmas pudding. Intense aromas of dried fruits, including figs and walnuts. It is full of rich spices and caramel notes.Delicious on its own or also ideal with desserts such as ice cream or fruit salads.This 5 Year Old Madeira starts life as fermenting must and is then fortified before
undergoing its own very special maturation process. Made of predominantly
Tinta Negra Mole Grapes, harvest begins from mid-August due to the warm
southerly climate. A unique and highly sophisticated artificial Estufa process
is set up for the 5 year old wines, where temperatures rise to 45ºC before being
allowed to cool. This process takes 90 days and renders the wine completely
stable. It is then aged in oak casks for 5 years, prior to bottling.
Amber colour with olive green
hues. The nose has hints of
toffee and coffee with raisins
and mandarin peel. Unique and
delicious flavours of rich raisin
and dried date fruit with hints of
citrus peel and caramel flavours.
Concentrated and viscous with
lingering aged complexity. The wine is aged in barrels for over 10 years.Suggested Cuisine
Enjoy with Christmas pudding or
sticky date pudding. Try poured
over vanilla ice cream or with a
cheese platter after dinner.
General Characteristics
Sweet / Medium bodied. Winemaking: When the botrytised Semillon grapes
are being harvested for Noble One,
a parcel of fruit at approx 20-22
baume is selected to produce the
Black Noble intense and ripe botrytis
flavours. Very little fermentation
occurs before fortification with a
neutral grape spirit is added to
inhibit any further fermentation.
Black Noble is then clarified, a touch
of brandy spirit added for further
complexity before being transferred
into used Noble One barriques.
Cellaring: The wine has been aged in
barrel and is designed for current
consumption but will keep in the
bottle for several years. So far Black Noble has won over 60 awards and medals in various wine competitions.
Nut brown colour with a slight green hue. Intense aromas of raisin, fig and spice with underlying floral notes. A rich and luscious palate exploding with rich Muscat flavours of raisins, figs, dates, toffee and caramel. Sweetness balanced with some vanillin oak notes make for a lovely lingering finish.This Muscat has been aged in barrel and is designed to enjoy as soon as opened. It will also keep for several more years in bottle.Fruit is left on the vines to become very ripe before harvesting at 16-18 baume. Once harvested the fruit is crushed, partially fermented then fortified on skins to further extract the floral and aromatic flavours from the fruit. The wine is pressed off skins and then transferred to barrels for maturation.Suggested Cuisine: Chocolate and dark fruit based
desserts, or enjoy a glass after a
meal with a platter of cheeses,
dried fruit and nuts.
