are made from organically-grown grapes in vineyards cultivated using natural fertilisers, cover crops,
biological control of pests and not using any chemical products that may damage the health of the
environment. Grapes are cooled and undergo pre-ferment whole bunch maceration before temperature
controlled tank fermentation.
This Cabernet Merlot is deep purple in colour, an intensely fruity wine with cherry on the nose, followed by flavours of blackcurrant and ripe red berry on the palate. Some of the wine was aged in French oak and this gives a bit of extra flavour to the finished wine.The wine is made from selected vineyards in the Western Cape where the bracing Benguela current brings cool breezes - perfect conditions for making fresh, flavoursome wines.Serve at room temperature as an aperitif or match with beef short ribs and other braised beef dishes.Suitable for vegans.Suitable for vegetarians.
Attractive aromas of black currant and crunchy red fruit accompanied by notes spice. The palate is concentrated and very smooth with great crunchy red fruit character. The tannins are ripe and providewelcome grip and combined delicious acidity, leads to a balanced finish.FOOD MATCHThis wine is ideal with well-seasoned, strong-flavoured dishes, such as pasta with Bolognese sauce, stuffed cannelloni, grilled beef, pork, or poultry. It also goes very nicely with ripe cheeses, salami, ham, and pastrami. The Central Valley vitivinicultural zone extends from the Maipo Valley in the north to the Maule Valley in the south. The entire zone has good drainage, high fertility, and tremendous agricultural aptitude, especially for red grape varieties such as Cabernet Sauvignon, Carmenère, and others. The Mediterranean climate has warm summers with broad daily oscillations between daytime and night time temperatures, and cold, rainy winters that allow for good vine development. The soils are of alluvial origin with moderate depth, and good for agriculture. The grapes were hand picked in mid- April and submitted to a week-long pre-fermentation cold soak at 8ºC (46ºF) to extract fresh fruit characteristics. Alcoholic fermentation took place at 25º–28ºC with daily pump-overs. The new wine remained on its skins for a period, after which the free run wine was separated from its skins and allowed to undergo malolactic fermentation naturally. The Côtes du Rhône is made from various types of soils, but mostly from limestone terraces with sand and red clay. The colour is purple tinged garnet. The aromatic range of the nose goes from fresh berries (wild raspberry, blackcurrant and blackberry) to spices.The palate is big and full flavoured with silky smooth tannins and touches of liquorice and pepper.

Vinification: After traditional pressing the juice goes in the
fermentation tank with a capacity of 200/600 litres. The temperature for the
fermentation is around 24-26°C and it goes on for 10 days. The wine stays in
contact with the skins for 8 days and after the malolactic fermentation it is
stored in tank. This preserves all primary fruit aromas keeping the wine
fragrant with an appealing nose.
