Casablanca Valley can be identified by its closeness to the Pacific Ocean, influenced by the coastal breeze, which moderates temperatures. The land is basically formed by hills that increase in height asit goes east towards the Coastal Mountain Range. It has an alluvial origin, with sandy textures of high permeability, poor and shallow, which causes the valley to have low yields, compared to others. Thetemperatures are colder and templates, causing a slower ripening in the fruit and, in consequence, great character in flavour and aroma, for white varieties like Chardonnay and Sauvignon Blanc. The grapescome from vineyards that are approximately 12 years old in the Casablanca estate, trellised in simple vertical shoot position, with an average yield of 12 tons/ha. They were hand-picked into bins duringthe first week of March when they had reached the ideal state of ripeness. The grapes were transported to our Nancagua winery for vinification in stainless steel tanks at low temperatures with selectedyeasts, pumpovers, and delicate lees stirring to reach the desired final result. camarones. One of the few wines which matches smoked salmon. Suitable for vegans.Suitable for vegetarians.Grapes are sourced from Fernando de Castilla's partners' vineyards in the Jerez district. The soil type is
Albariza. Picking takes place in early September. The wine is made from the first pressing of grapes,
this gives a light fresh style. Fermentation takes place at relatively high temperatures to reduce fruit
flavour. This makes a very neutral wine which is perfect for the production of sherry. The wine
undergoes malolactic fermentation. In the February after harvest the wine is fortified with grape
brandy up to 15% abv. Once at this stage the wine is then added to fill 4/5ths of the butt (600-litre
casks of oak American oak) in the youngest Criadera (scale) in the Solera (a Solera is the total number
of scales which can be from 3 up to 9). The wine then begins its ageing process under flor.
Periodically, a portion of the wine in a barrel is moved into the next scale, using tools called the canoa
(canoe) and rociador (sprinkler) to move the wine gently and avoid damaging the layer of flor in each
barrel. At the end of the series only a portion of the final barrel is bottled. This process is called
"running the scales". Only 20% of finished wine can be removed from the Solera in one year. The
ageing process of the Manzanilla Solera takes place in Sanlucar de Barrameda and the average age of
the sherry is 3 years old

The vineyards are southwest facing and situated at altitudes of between 250 and 400m. The Piemonte low Guyot trellis system is used for the vines, which grow in a limestone-clay soil. Planting density is 4000 to 4500 vines per hectare. Grapes are hand harvested in the last week of September. Temperature controlled fermentation takes place in stainless steel (16- 18ºC) and the wine spends a couple of months on lees.

aroma with clear hints of ripe golden apple, exotic fruit salad and citrus fruits; a
persistent flowery aroma reminiscent of acacia and wisteria flowers in the style of
Prosecco.Whole grapes are put into the pneumatic press for soft pressing. The resulting
must, after a first racking, is placed into controlled temperature tanks at 0% where
it remains until it is used for the production of 0% sparkling. CO2 is added gently to

The region´s mountainous topography, it is cool climate, and its distinctively thin and rocky soil, produce white wines known by its minerality and an intense acidity. Fundo Rosario vineyards are located 250m above sea level in the Lagunilla zone. The vines are clone 242, vertically positioned, drip irrigated, and primarily planted on hillsides. The mountainous topography of the region, its fresh climate and its particular rocky and thin soil, produce white wines famous for their minerality and intense acidity. The grapes are machine harvested at night to take advantage of the naturally low temperatures and transported to the winery, where they are deposited into a pneumatic press. After pressing, the must is decanted and prepared for alcoholic fermentation by adjusting the turbidity level to 100 NTU and inoculating the tank with selected yeasts. Fermentation begins at 15ºC and finished at 16º–17ºC. The tank is then chilled to aid in the decantation of the coarser lees, and after 2 days, the clean wine is racked to tanks for aging. During this time, its lees are maintained in suspension for 3 months, which encourages the development of fatty and aromatic compounds and delivery of greater complexity to the wine.
