Pale gold in colour with youthful highlights. On the nose, there are intense aromas of grapefruit which are balanced with a touch of minerality and floral notes. These are located in the Cafayate Valley in the very heart of the Calchaqui Valley, distinguished for being the highest wine region in the world. The climate here is very dry, with just 150mm of rain in an average year and a huge diurnal temperature change of around 20°C. The soils here are rocky, poor and sandy so the roots of the vines are forced to dig deep to find the vital nutrients and water they need, which in turn results in a huge concentration of flavour within the fruit.
Pale in colour with just a hint of straw yellow at the rim. Powerful and acute on the nose, yet aromatic,
intriguing and inviting. Sensuously textured rather than brittle, absolutely bone dry, aristocratic and
very poised. Its profile is perfectly seamless right until the finish where fascinating savoury, nutty,
ripples conjure some charming, subtle and elusive final flavours. Fino Sherry, it is beyond dispute, is
absolutely the most incredible and undervalued alcoholic drink there is.Served chilled and try with salted almonds, light fish dishes or seafood tapas. Perfect with salt cod
(Bacalao) and fried hake.Grapes are sourced from FdeC's partners vineyards in the Jerez district. The soil type is Albariza.
Picking takes place in early September. The wine is made from the first pressing of grapes, this gives a
light fresh style. Fermentation takes place at relatively high temperatures to reduce fruit flavour. This
makes a very neutral wine which is perfect for the production of sherry. The wine undergoes
malolactic fermentation. In the February after harvest the wine is fortified with grape brandy up to
15% abv. Once at this stage the wine is then added to the youngest Criadera in the Solera. The wine
then begins its ageing process under flor. Only 20% of finished wine can be removed from the Solera

Reduced to Clear.This wine is bright ruby red in colour. On the nose, generous
aromas of strawberries and red cherries stand out, with spicy
complexity coming from the oak ageing. It is vibrant and supple
on the palate with elegant tannins, delicately balanced acidity
and a lovely fresh finish.The Guedes family had always rated the quality of the Herdade
do Peso grapes – they had been using them in their Vinha do
Monte wines since the early 1990s – and jumped at the
opportunity to purchase the estate in 1996. Situated in the south of
the Alentejo, in the sub-region of Vidígueira, the Herdade do Peso
estate covers a total of 457 hectares, 160 hectares of which are
currently planted with vines. Winemaker Luís Cabral de Almeida
makes expressive and generous wines that reflect the warmer
climate of the Alentejo.
VINEYARDS
Despite its southerly location, Vidígueira is one of the cooler
Alentejo sub-regions and benefits from cool Atlantic air funnelled
inland from the coast by a gap in the surrounding mountains.
Limestone soils help to control vine vigour and lend elegance to
the wines. All of the Herdade do Peso vineyards are sustainably
farmed and an on-site dam provides much-needed water to
irrigate the vineyards during the Alentejo summers.
VINIFICATION
Following full destemming and gentle crushing, maceration and
fermentation took place in stainless-steel tanks at a controlled
temperature of 26ºC over a period of around eight days. After
malolactic fermentation, the wine aged in second, third and
fourth fill French oak barrels for around six months. It underwent a
light fining and filtration before bottling.
