This innovative new Rosé style of port has been made by a new technique which extracts fresh fruity flavours and the pink colour from limited contact with the skins of the grapes. The result is a light and fresh Rosé port with lots of red berry flavours. 16 to 18C in temperature controlled stainless steel tanks. The wine was bottled young after a period of
3 to 6 months ageing on fine lees in stainless steel tanks.

This medium bodied wine has an enticing nose of freshly baked Bakewell tart, homemade jam and almonds. Light cherry red in colour leads to an elegant nose of red cherry and raspberry fruit with gentle spice notes from barrel aging. The palate is silky, fine and hugely inviting. Delicious ripe summer fruit character is perfectly balanced by soft tannins and refreshing acidity. It has a long and elegant finish.Very good with white meats and oily fish. The perfect partner for mushroom-parmesan risotto.The Casablanca Valley is influenced by its proximity to the Pacific Ocean and its coastal breezes that moderate temperatures. The area ranges from soft rolling hills to higher hills toward the Coastal Mountain range in the east. The poor, sandy loam soils are alluvial in origin, relatively shallow and very permeable, resulting in yields which are generally low in comparison with other Chilean valleys. Temperatures are much cooler here, allowing the grapes to ripen very slowly to produce rich flavoured wines. The Casablanca Valley is influenced by the Pacific Ocean and the Humboldt Current, resulting in constant humidity and average temperatures of 25ºC in the summer and 14ºC in the winter. The spring of 2015 was cooler than average and the relative humidity was higher. This caused uneven budbreak and later ripening. An increase in rainfall forced an earlier harvest in April. The grapes are harvested into 400-kg bins and transported to the winery, where first the clusters and then the grapes (after destemming) are selected on a conveyor belt. Once in the tank, they undergo a pre-fermentation maceration for 3 days, followed naturally by alcoholic fermentation with native yeasts. During this stage, temperatures are kept at 24-26º C, with a gentle pump-over routine. A 2-3-day post-fermentation maceration is then carried out. Malolactic fermentation occurs spontaneously in stainless steel tanks and barrels. The wine is filtered through 1-micron membranes and then bottled. 70% of the wine is aged for 6 months in French oak barrels.Suitable for Vegetarians and Vegans.This wine is Organic.

The altitude here is around 250 m, with soil rich in iron oxide and loess on fractured limestone bedrock.25% of the grapes were transfered directly into 1000 Kg bins without being destemmed then sealed and put through a carbonic macceration fermentation for 10 days in order to produce the strawberry fruit part of the blend. The remaining 75%was destemmed lightly crushed and then macerated and fermented normally at 25°C in stainless steel automated fermenters. Both wines were then seperately pressed and the noncarbonic maceration wine was lightly oaked for 2 months before blending.
A bright, vibrant wine with spicy red berry fruit such as blueberry and mulberry, exotic spice and creamy vanilla, evident ripe tannins and a long finish. This wine drinks well young but will improve over the next 6 to 8 years, gaining more complexity. The grapes were hand-picked into small baskets and taken to the cellar. A portion was
fermented in open bins and hand-punched four times a day. The rest was fermented in a
rototank. No commercial yeast was used as these grapes ferment well with their own yeast.
The wine matured in a mixture of French and American oak barrels for 14 months.
Approximately 30% was new wood.

Grapes are hand and
machine harvested from 30 year old Sauvignon Blanc vines within a 22 hectarevineyard on the hill
of St Andelain on a mix of Silex and Kimmerigian clay. The estate undertakes
disease and pest
control measures by maintaining natural balance ("lutte raisonnée")
and works the soil
in a traditional way.
Individual parcels are vinified separately. The grapes are gently pressed
pneumatically. Prior
to fermentation in stainless steel tanks, the must is naturally clarified by
cold
stabilisation and
some of the grapes are macerated on the skins for a short period to maximise
flavour
complexity. Either
wild or selected yeasts are used, depending on conditions - indigenous yeasts
are
believed to add more
character. The fermentation is cool and slow over 3 weeks and the wine remains
on the fine lees. The gravity fed cellar
is on two levels and all temperature controlled.

this is a concentrated wine yet with real elegance, complexity and power.

Torto valley. Quality is determined by the grape varieties, by the age of the vines, their method of
training and the density of planting. All these factors are officially converted into points, the sum of
which determines the final classification of the property. Here, this sum exceeds 1200 points, ensuring
it belongs to a select group of "Class A" properties. Summer was hot in 2004 followed by a wet
September but finally more sun pushed up sugar levels before harvest. After harvest, old lagares (open
granite tanks about 75cm high) are still used to make the best Ports with traditional foot treading of the
grapes without any mechanical crushing. This Port was aged for a couple of years in wood and several
years in bottle before release. It has the potential to age for around 25 years or more.

A Ratafia style wine was made from the pressings and the free run juice was used to make this wine. The juice was cold settled and 3 days later the clear juice was transferred into fermentation tanks. This Riesling Trocken ( Trocken means 'dry' in German ) is a crisp, dry wine with plenty of ripeness and just about the perfect balance.The palate has concentrated fruit flavours and a long finish. The wine was fermented in stainless to retain the crisp, fresh flavours.For more than 1200 years the Seehof winery ahs been located in the middle of the old town centre of Rhenish- Hessian and it is run by the fifth generation Fauth family.Suitable for vegans.Suitable for vegetarians
This is a deep, ruby coloured, concentrated red blend shows prominent aromas of dark cherry, blackcurrant and vanilla. On the palate cinnamon, sweet spice and ripe, juicy dark fruit together with a firm tannin structure, ensures good length and an enduring finish.Grapes were harvested at optimal ripeness. After de-stem, they were cold soaked for
two days to extract more fruit character and enhance colour. The wine was inoculated
with specially selected yeast strains and fermented until dry. Free-run juice was racked
to barrel where it underwent malolactic fermentation. The wine was then racked from
the lees and returned to barrel for 18 months of maturation.

A classic Sancerre with crisp, crunchy grapefruit and lime citrus flavours and a gently herbaceous

Julien and Clément manage 20 hectares of vines across 60 different parcels, three quarters of which
are Sauvignon Blanc and one quarter Pinot Noir. Soils are primarily the classic ‘terres blanches’ claychalk, a heavier soil which gives the wines a ripe fruit character, and some 'caillottes', a form of
limestone. A very modern, well-equipped, stainless steel cellar allows them to control the temperature
of the wines during fermentation and later storage in tank prior to bottling to retain the freshness of the
fruit characters. The grapes for this cuvée are a blend from all of the Raimbault's parcels of Sauvignon
Blanc, and the wine is aged in stainless steel for ten months on its lees.

This refreshing, aromatic wine has wonderful aromas of fresh limes and ripe
citrus, with a juicy gooseberry palate and lingering finish. Pair it with your
favourite seafood and pasta dishes. The fruit for this wine was grown in four Wairarapa vineyards, each with
differing soils. One is stony loams, from which this wine is predominantly
produced, while the others are a mixture of silt loams and hillside clays. This
variety provides different flavour profiles, which helps us to increase the
complexity of the finished wine. These vines are relatively young, and are
cropped at low yield levels to give intensely flavoured grapes.
The focus in the winery is to capture the pure fruit flavours that come from the
vineyard, whilst adding complexity through our winemaking efforts to produce
a multi-dimensional wine. This is achieved by tank fermenting the juice using
yeasts that are able to ferment at low temperatures – preserving the essential
fruit flavours.

Drip irrigation is used if absolutely necessary though is by no means used every year.Winemaking100% handpicked estate grown fruit was harvested and taken quickly to the winery where it was gently destemmed and crushed. Cooled immediately to 8°C, the grapes were then pressed in a vacuum press under nitrogen to prevent oxidation, before being transferred to decantation tanks for 24 hours until completely clarified. Inoculated with selected yeast, the wine was fermented in stainless steel at very low temperatures between 8 and 10°C for 25 days, before clarification and bottling.

The grapes are machine harvested at night to take advantage of the naturally low temperatures and transported to the winery, where they are deposited into a pneumatic press. After pressing, the must is decanted and prepared for alcoholic fermentation by adjusting the turbidity level to 100 NTU and inoculating the tank with selected yeasts. Fermentation begins at 15ºC and finished at 16º–17ºC. The tank is then chilled to aid in the decantation of the coarser lees, and after 2 days, the clean wine is racked to tanks for aging. During this time, its lees are maintained in suspension for 3 months, which encourages the development of fatty and aromatic compounds and delivery of greater complexity to the wine. This wine represents just that, a fantastic example of Sauvignon Blanc from
Mendoza in Argentina. With understated elegance, citrus-fruit aromas are most
prominent on the nose; a wonderful mineral edge lends structure and balance.

during the third week of February. Then they are cooled and softly pressed. A

Picked at night and crushed within an hour of picking before being sent to the fermentation tanks. The
Shiraz grapes were fermented in temperature-controlled tanks maintained at 22 - 25ºC to avoid
extracting any harsh tannins, with the fermentations pumped over to extract good colour. 20% of the
final blend is barrel aged. The winemaker also added 5% Malbec at the end of the whole process - a
sneaky technique that gives a mulberry fruit twist on the finish.
