is set up for the 5 year old wines, where temperatures rise to 45ºC before being
allowed to cool. This process takes 90 days and renders the wine completely
stable. It is then aged in oak casks for 5 years, prior to bottling.

These are located in the Cafayate Valley in the very heart of the Calchaqui Valley, distinguished for being the highest wine region in the world. The climate here is very dry, with just 150mm of rain in an average year and a huge diurnal temperature change of around 20°C. The soils here are rocky, poor and sandy so the roots of the vines are forced to dig deep to find the vital nutrients and water they need, which in turn results in a huge concentration of flavour within the fruit.

climate here is warm and dry, and some of the vines are over 50 years old. After harvesting
fermentation takes place in stainless steel, with a small portion (around 10%) ageing for 4 months in
2nd year French oak barrels, before the final blending and bottling.

a good lengthy finish.Perfect with wild boar sausages, venison, roast lamb or gamey stews.Suitable for vegans.Suitable for vegetarians.Made from Nebbiolo grapes cultivated around the town of Barolo in southern Piemonte. These are
trained on a low Guyot trellis at a density 4-5,000 vines/ha. The grapes were hand-harvested, de stemmed and then crushed to small fermenters, for around 12 days, with daily pumping-over. This
ensures good colour and flavour extraction, but avoids over extraction of the abundant Nebbiolo
tannins. The wine was drained off at dryness, and the skins transferred to a small press. After pressing
the wine was settled for two days, and then racked to stainless steel tanks for malolactic fermentation.
After three years maturation in 50hl Slavonian oak casks it was racked and bottled.

A deep, luscious, medium rich Madeira; tangy with crisp fruit, excellent with dessert and cheeses. Blandy's Duke of Cumberland is fined and does not require decanting. It is a superb accompaniment to dessert dishes, especially fruit, cakes, milk chocolate or custard puddings and soft cheeses. It has been bottled when ready for drinking and will keep for several months after opening. VINEYARDS Various quality vineyards grown at between 200m and 400m on the north of the island near São Vicente. VINIFICATION Blandy's Duke of Cumberland underwent fermentation on the skins with natural yeast at between 24°C - 26°C C in temperature controlled stainless steel tanks. After approximately 3 days, fortification with grape brandy takes place, arresting fermentation at the desired degree of sweetness. MATURATION Blandy's Duke of Cumberland was transferred to 'estufa' tanks where the wine underwent a cyclic heating and cooling process between 45°C and 50°C over a period of 3 months. After 'estufagem' the wine was aged for three years in American oak casks and then underwent racking and fining before the blend was assembled and bottled.

A classic Chardonnay from Southern Burgundy - fine buttery and floral notes on the nose and a wine
of substance and finesse on the palate. Some creamy textural notes up front reveal the discreet
presence of oak, whilst on the finish there is some underlying minerality and a hint of citrus zestiness
that provides long lasting flavours.

lose their colour too quickly. The first 10cm of each barrel is filled with grapes which are crushed by
foot, the barrel is then topped up with whole bunches and fermentation starts naturally after 2-3 days.
Since yeasts are an expression of the individual vintage and vineyard, no artificial yeasts are used. 3-4
times a day the pulp is trodden by foot to further extract colour and flavour. The wines are left in open
top fermenters until the cap sinks then decanted into 20-30% well-toasted new oak (a small percentage
compared to most). After 15-20 months the wine is racked, blended and lightly fined. Wines are not
filtered but checked by candlelight, then bottled directly from barrel by hand on a cask by cask basis.

talented young Cellarmaster Nadia Barnard. Balanced grapes are hand harvested, fermented
spontaneously with wild yeast and then raised in large wooden casks (or 'foudre' en Francais). The
resulting wine therefore, is perhaps more 'Pino' than 'Tage'. No additions other than sulphur as a

Reduced to Clear.The name Los Cardos comes from the thistle: the sign of a good harvest. This
wine represents just that, a fantastic example of Cabernet Sauvignon from
Mendoza in Argentina. Deep ruby red in colour, it is full of black fruit flavours,
with a good hint of spice as well. It is really elegant, with a long finish.The grapes are harvested in late March and early April. In the winery, they are
first destemmed and softly crushed. A cold pre fermentative maceration takes
place to preserve the primary aromas. Then, the must is cooled and traditional
fermentation starts.

Ruby red in colour. The nose is intense, with a pronounced presence of fruity aromas such as cherries and strawberries as well as truffle and chocolate. Medium bodied, well balanced, and delicate, with particularly smooth tannins and rich acidity, resulting in a juicy and very pleasing wine with a persistent finish.Ideal with meat-based dishes and stews. This wine shows a unique harmony with grilled blood sausage, slow-cooked beef, and pastas such as gnocchi with blue cheese. Serve at 18ºC in a Bordeauxstyle glass.The grapes for this wine come from organic vineyards of Los Morros and Los Robles in the Maipo Valley. Soils are alluvial, rich in minerals with good drainage and irrigated by water from the snow thaw. The grapes were hand picked. The Maipo zone has ideal conditions for growing Cabernet Sauvignon. The Maipo River regulates the temperatures naturally and prevents frost and extremes of heat and cold. The spring of 2013 was slightly colder than the historic average, followed by a summer with high temperatures, which accelerated ripening and prevented the delays that were initially predicted for the 2014 harvest. Rainfall in the Maipo Valley was concentrated in the winter months and reached approximately 250 mm, which is well below the nearly 450 mm recorded during the 2012–2013 season. The grape reception area includes a double selection conveyor belt that allows selection first at the bunch level and again after destemming. The Mediterranean climate has warm summers with broad daily oscillations between daytime and night time temperatures, and cold, rainy winters that allow for good vine development. The soils are of alluvial origin with moderate depth, and good for agriculture. The grapes were hand picked in mid- April and submitted to a week-long pre-fermentation cold soak at 8ºC (46ºF) to extract fresh fruit characteristics. The new wine remained on its skins for a period, after which the free run wine was separated from its skins and allowed to undergo malolactic fermentation naturally. A post-fermentation maceration followed, and then the wine was devatted, separating the free-run wine from the skins. everyday drinking or more salubrious occasions.Sourced from 13 year-old-vines in Southern Coonawarra, the
grapes for our 2019 Lost Weekend Chardonnay were picked from
the 8th to the 12th of March.
Following harvest, the fruit was pressed off skins and the
pressings were kept separate and fermented cool for 35 days.
The wine was then racked off gross lees to keep the style clean
and crisp before being matured in stainless steel for 5 months
prior to bottling.
Lost Weekend is a fresh and vibrant style of Chardonnay which
will reward short to medium term cellaring. Best shared with a
large group of friends over a big haul of freshly caught seafood!

Casablanca Valley can be identified by its closeness to the Pacific Ocean, influenced by the coastal breeze, which moderates temperatures. The land is basically formed by hills that increase in height asit goes east towards the Coastal Mountain Range. It has an alluvial origin, with sandy textures of high permeability, poor and shallow, which causes the valley to have low yields, compared to others. Thetemperatures are colder and templates, causing a slower ripening in the fruit and, in consequence, great character in flavour and aroma, for white varieties like Chardonnay and Sauvignon Blanc. The grapescome from vineyards that are approximately 12 years old in the Casablanca estate, trellised in simple vertical shoot position, with an average yield of 12 tons/ha. They were hand-picked into bins duringthe first week of March when they had reached the ideal state of ripeness. The grapes were transported to our Nancagua winery for vinification in stainless steel tanks at low temperatures with selectedyeasts, pumpovers, and delicate lees stirring to reach the desired final result.
