10 Year Old Malvasia Madeira Henriques & Henriques 50cl

The Canteiro process is employed for all 10 and 15 year old Madeiras from H&H where the wine is heated naturally in barrels over some months to enhance concentration and consistency of the wine. Barolo 'Flori' Araldica Piemonte
A complex nose combining plum, mulberry, ripe strawberry and brown spice with delicate floral and violet notes. Tannins are firm and pleasingly supported with plump fruit and a rounded texture, giving a good lengthy finish.Perfect with wild boar sausages, venison, roast lamb or gamey stews.Suitable for vegans.Suitable for vegetarians.Made from Nebbiolo grapes cultivated around the town of Barolo in southern Piemonte. These are trained on a low Guyot trellis at a density 4-5,000 vines/ha. The grapes were hand-harvested, de stemmed and then crushed to small fermenters, for around 12 days, with daily pumping-over. This ensures good colour and flavour extraction, but avoids over extraction of the abundant Nebbiolo tannins. The wine was drained off at dryness, and the skins transferred to a small press. After pressing the wine was settled for two days, and then racked to stainless steel tanks for malolactic fermentation. After three years maturation in 50hl Slavonian oak casks it was racked and bottled.

General Characteristics Sweet / Medium bodied. Winemaking: When the botrytised Semillon grapes are being harvested for Noble One, a parcel of fruit at approx 20-22 baume is selected to produce the Black Noble intense and ripe botrytis flavours. Very little fermentation occurs before fortification with a neutral grape spirit is added to inhibit any further fermentation. Black Noble is then clarified, a touch of brandy spirit added for further complexity before being transferred into used Noble One barriques. Cellaring: The wine has been aged in barrel and is designed for current consumption but will keep in the bottle for several years. So far Black Noble has won over 60 awards and medals in various wine competitions.

Blandy's Duke of Cumberland Medium Rich Madeira
A deep, luscious, medium rich Madeira; tangy with crisp fruit, excellent with dessert and cheeses. Blandy's Duke of Cumberland is fined and does not require decanting. It is a superb accompaniment to dessert dishes, especially fruit, cakes, milk chocolate or custard puddings and soft cheeses. It has been bottled when ready for drinking and will keep for several months after opening. VINEYARDS Various quality vineyards grown at between 200m and 400m on the north of the island near São Vicente. VINIFICATION Blandy's Duke of Cumberland underwent fermentation on the skins with natural yeast at between 24°C - 26°C C in temperature controlled stainless steel tanks. After approximately 3 days, fortification with grape brandy takes place, arresting fermentation at the desired degree of sweetness. MATURATION Blandy's Duke of Cumberland was transferred to 'estufa' tanks where the wine underwent a cyclic heating and cooling process between 45°C and 50°C over a period of 3 months. After 'estufagem' the wine was aged for three years in American oak casks and then underwent racking and fining before the blend was assembled and bottled.

The first 10cm of each barrel is filled with grapes which are crushed by foot, the barrel is then topped up with whole bunches and fermentation starts naturally after 2-3 days. Since yeasts are an expression of the individual vintage and vineyard, no artificial yeasts are used. 3-4 times a day the pulp is trodden by foot to further extract colour and flavour. The wines are left in open top fermenters until the cap sinks then decanted into 20-30% well-toasted new oak (a small percentage compared to most). After 15-20 months the wine is racked, blended and lightly fined. Wines are not filtered but checked by candlelight, then bottled directly from barrel by hand on a cask by cask basis.
