This Pinot Grigio has a nice acidity with hints of citrus and white flowers on the nose. Goes well with grilled salmon, stir fry vegetables and rice dishes.
The vines are grown in the Hills of eastern Veneto. The grapes are harvested at the end of August at low temperature and kept in cold maceration for about 7 days. After the pressing, when the wine is still must, the wine is fermented at temperature not above 14°C for the entire duration of vilification which it took 30-40 days. The wine is rested on the lees for over 3 months with continuous baronage. After assembly it is then rested for a month in the tank before bottling.
