A classic Chardonnay from Southern Burgundy - fine buttery and floral notes on the nose and a wine of substance and finesse on the palate. Some creamy textural notes up front reveal the discreet presence of oak, whilst on the finish there is some underlying minerality and a hint of citrus zestiness that provides long lasting flavours.

FOOD MATCH An admirable accompaniment to the classic Burgundian dish of poulet à la crème (chicken in creamy sauce), or a shellfish chowder. Great with vegetable risotto and pan fried fish, too.

From a 12 hectare plot in the village of Bussières, to the south of the Mâconnais region, with an average vine age of about 40 years. The soil is classic argilo-calcaire that suits Chardonnay so well and that lends elegance and finesse to the final wines. 10% of the wine is barrel aged to give a more textural, slightly creamy element.

A pretty, translucent ruby colour with earthy, strawberry fruit and a light pepperyness on the nose. Mouthwatering acidity balances the moderate gentle ripe tannins and elegant, pure, somewhat savoury red fruit.

Serve with a traditionally Coq au Vin. Roast chicken or young game birds and equally good with pasta bakes or wild mushroom linguine

The grapes come into the winery as whole bunches because the Vallets believe that destalked wines lose their colour too quickly. The first 10cm of each barrel is filled with grapes which are crushed by foot, the barrel is then topped up with whole bunches and fermentation starts naturally after 2-3 days. Since yeasts are an expression of the individual vintage and vineyard, no artificial yeasts are used. 3-4 times a day the pulp is trodden by foot to further extract colour and flavour. The wines are left in open top fermenters until the cap sinks then decanted into 20-30% well-toasted new oak (a small percentage compared to most). After 15-20 months the wine is racked, blended and lightly fined. Wines are not filtered but checked by candlelight, then bottled directly from barrel by hand on a cask by cask basis.

Lots of lovely ripe peach and apricot aromas, caramelized apples and hot stones on the nose. Followed by generous, pronounced fruit on the palate with nectarine skins and baked peaches balanced firmly by a rounded, lemon flesh acidity.

After harvest, the wine is kept in stainless steel tanks to retain the freshness of the juice.

Try with chicken with a creamy sauce, Thai dishes, or cooked fish with a green salad.

 A vivid yellow coloured wine with hints of green. This is a dry wine with a good length and a powerful finish.

Serve chilled with oysters, seafood, pates, deli meats and pork dishes. Also goes well with goats cheeses and gruyere cheese. 

The wine has a lovely shimmer and is a pretty golden colour with green reflections. The rich and complex nose is characterised by pleasant and subtle floral and mineral aromas. It has a wonderful, fat structure in the mouth with minerality and charming aromas of butter, brioche and meadow mushrooms. It is a harmonious wine that is not only fine and elegant but also has an excellent aromatic persistence.

Best drunk cold with oysters, shellfish, fish, chicken, turkey and goats cheese.
