The grapes come into the winery as whole bunches because the Vallets believe that destalked wines lose their colour too quickly. The first 10cm of each barrel is filled with grapes which are crushed by foot, the barrel is then topped up with whole bunches and fermentation starts naturally after 2-3 days. Since yeasts are an expression of the individual vintage and vineyard, no artificial yeasts are used. 3-4 times a day the pulp is trodden by foot to further extract colour and flavour. The wines are left in open top fermenters until the cap sinks then decanted into 20-30% well-toasted new oak (a small percentage compared to most). After 15-20 months the wine is racked, blended and lightly fined. Wines are not filtered but checked by candlelight, then bottled directly from barrel by hand on a cask by cask basis.

Les Vignobles Foncalieu are a strong cooperative with some 650 winegrowers who have 4000 hectares of vines between them. They based in the heart of the Languedoc and they are focused on making quality wines.

The wines of Terres Fidèles are designed to express the spirit of this extraordinary place, old vine Grenache, Carignan, Malbec, Cinsault, Viognier and more, that are authentically crafted, small batch wines of the wilds.

Mont Rocher Carignan Vieilles Vignes is produced from 50-year-old, low yielding vines growing on rugged limestone rich soils, in sun drenched vineyards at the foothills of the Pyrénées. It is here some of the most expressive Carignan is grown and crafted to display purity of fruit and a distinctive 'goût de terroir', carried out in a modern style. The grapes are de-stemmed, crushed and fermentation is carried out at controlled temperature, around 23°C . Ageing is carried out in tanks with a small amount of French oak staves to add more complexity and roundness to the wine.

Juicy and mouthwatering, our old vine Carignan displays hallmark black cherry aromas. Rich and smooth, the red berry fruit character remains pure and vibrant to the finish with vanilla notes.

Lots of lovely ripe peach and apricot aromas, caramelized apples and hot stones on the nose. Followed by generous, pronounced fruit on the palate with nectarine skins and baked peaches balanced firmly by a rounded, lemon flesh acidity.

After harvest, the wine is kept in stainless steel tanks to retain the freshness of the juice.

The wine has a lovely shimmer and is a pretty golden colour with green reflections. The rich and complex nose is characterised by pleasant and subtle floral and mineral aromas. It is a harmonious wine that is not only fine and elegant but also has an excellent aromatic persistence.

In the south-west of France, Gascony has emerged as a specialist producer of fresh white wines which offer finesse and charm. A mixture of silt, sand and alluvial deposits help the soil to drain - ideal conditions for a healthy crop.

A fresh, clean unoaked wine made from selected grapes grown in Burgundy and the South of France. It has plenty of floral aromas, green apple and nectarine notes and good balance in the mouth between fruit and roundness leading to a long pleasant finish.

A rich sweet dessert wine with an attractive golden yellow robe with silvery nuances. The nose is complex and fine, both floral and spicy.  Made from 60% Chenin - 20% Chardonnay - 20% Grolleau grown in the heart of the Saumur vineyards, in the communes of Vaudelnay, Nueil-sur-Layon, Cléré-sur-Layon and Passavant-sur-Layon.

The grapes are harvested when perfectly ripe. The base wine is fermented in temperature-controlled vats and then matured on fine lees for 6 months. The second fermentation takes place in the bottle and the wine is stored on laths for 15 months.

NEW IN Chateau Haut-Mouleyre is located in the commune of Escoussans on the right bank of the Garonne. The various plots benefit from a variety of soil conditions on the sunny hillside, giving the wine plenty of personality.

This wine is very intense and brilliant garnet red colour associated with shades of fuchsia. After aeration, we have a complex and fruity nose with pleasant violet and vanilla aromas. On the palate this wine is rich, well balanced and persistent with notes of cinnamon, red fruit and coffee.

It pairs very well with game, regional cheeses and gourmet deserts.

Placed in Between Two Seas wine-making in 80 km from Bordeaux, the castle Lamothe-Castéra is a site known since the middle of the XVth century on the municipality of Roquebrune. Today Renaud and Claire JEAN exploit this property of 75 hectares of vineyard in A.O.C. Bordeaux and upper Bordeaux. The old vineyard and the association of three main vines of the region, worth knowing Merlot, Cabernet Franc and Cabernet Sauvignon allow the elaboration of a quality wine.

Tasting: Colour: dress intense ruby.

Nose: explosive with aromas of red berries and vanilla.

Mouth: well équlibrée, fruity, without bitterness Ideal with some red meat and any sorts of cheeses.

Best served between 16 and 18 °.

Intense, cigar box and ripe spiced fruit on the nose, a full-bodied St Emilion. Properly structured but with plush red fruits and a touch of leather and cedar with fine grained lingering tannins that last right through to the long finish.

From 2 hectares of vines with an average age of 25-30 years. A portion of the vines are situated at the base of the Saint Christophe des Bardes slope on sand and iron rich sandstone soils, the rest are situated on the gravel soils of Saint Sulpice. Planting is high density at 6,600 - 9000 vines per hectare. The grapes are partly hand harvested and the wine is aged in steel tanks for 12 to 15 months before bottling.

A golden yellow, sweet dessert wine that is rich and powerful. The palate has flavours of honey, acacia flowers, peach and candied citrus.

Can be kept for up to 10 years from  production.

Great as an aperitif or goes well with foie gras, white meat dishes, cheeses and chocolate or cream based desserts.

This is a traditional Châteauneuf-du-Pape serious and brooding and benefits from a little time to breath and open up. The palate is complex with herby, tapenade flavours and ripe textured tannins balancing the significant 15% alcohol which is expertly managed and integrated. 

Try with traditional roast lamb, lentil and vegetable moussaka and any rich hot-pot that heavily features aromatic 'herbes de Provence'. 

The soils of the vineyard are made up of clay and chalk covered with a layer of the classic large peebles ('galets') found in this area, which naturally keep yields low. The vines are over 60 years old and situated near the plateau de Carbières (close to Château Montredon). Harvesting is by hand, with selective sorting of the grapes. The grapes undergo a traditional long 'cuvaison' at quite high temperature and with extended maceration on the skins, 21-24 days to extract plenty of colour, fruit and tannins. This is followed by ageing for between 14-18 months in 'foudres' (large oak barrels), 70% vats, 30% Burgundian pieces and casks.

The Côtes du Rhône region is made from various types of soils, but mostly from limestone terraces with sand and red clay.

The colour is purple tinged garnet. The aromatic range of the nose goes from fresh berries (wild raspberry, blackcurrant and blackberry) to spices.

The palate is big and full flavoured with silky smooth tannins and touches of liquorice and pepper.

This is an intense, brilliant garnet coloured wine. It has lovely fruit, loads of body and a heady bouquet of ground peppers, raspberries, currants and spices. The wine is full bodied and dense and is rich and elegant.

A wonderful rich red wine that is made just 3 metres outside the northern border of Chateauneuf du Pape so must be classed as Cotes du Rhone.

A fine fully sparkling wine made from grapes grown in the Alsace region of France. This dry wine is a golden colour with amber hints. The bouquet is pleasant and it has a good rich mousse and a soft fruity finish.

This wine can be enjoyed any time from an aperitif right through a meal. 

A golden yellow coloured sparkling wine made in Burgundy. The wine has fine bubbles and a persistent mousse. 

On the palate, a great freshness with floral aromas. Delicate and fine bubbles with beautiful long lasting aromas.

Ideal as an aperitif, it can also accompany a meal or go well with fruit based desserts.

Classic Rhone style red, friendly and warming with sweet rich juicy blueberry fruit. The spice of Grenache blends well with the Syrah to give a lusciously textured wine with plum and strawberry fruits and a rounded palate. This is a medium bodied drinkable wine.

Drink with hearty food such as grilled meats and casseroles. Also great with pizzas and medium mature hard cheeses.

Olive groves ('Oliviers' in French) and vineyards flourish side-by-side in the sun-drenched Mediterranean summers of southern France, where the Grenache and Cinsault grape varieties have been made into rosé wine for over 2,000 years. The two varieties meld together to make a rosé which is at once exuberantly fresh and tangy yet soft and smooth, laced with a gentle spice and brimming with the natural richness of ripe fruit.

This wine is pale lemon in colour with youthful reflections. Aromas of lemon, citrus blossom and red apple on the nose. The palate is refreshing and bright with zesty acidity balancing the ripe peach flavours.

Serve as a starter or with a cold buffet. 

 A fruity wine made from Grenache Blanc and Vermentino grapes. The result is a fresh and intensely fruity wine with dominant apricot and pear flavours. In the mouth the fruit flavours are evident and are emphasised by an beautiful round structure.

Plots within the Mâcon-Charnay-lès-Mâcon appellation lie on the higher slopes of the Mont du Mâconnais, where soils are varied but limestone is prevalent. Here Chardonnay ripens under a Continental climate (typically cold winters followed by warm springs and almost Mediterranean sun in the summer). Once ripe, picking is both by hand and machine. Machine harvesting has the advantage of picking in the early hours of the morning before daylight when the temperature rises; hand picking is gentler and keeps whole bunches intact. After pressing and static settling the must is cooled to around 12°C to ensure a controlled fermentation. Once alcoholic fermentation is complete, wines are left to winter and undergo malolactic fermentation. With enviable priority access to the cellar in Mâcon-Charnay, Samantha tastes each individual tank (up to 20) to select a very personalised blend for GENETIE 'Les Piliers', combining three essential elements - the florals, the exotic and the mineral. The final blend is kept on fine lees until bottling, combining the warmth of southern Burgundy with the elegance and finesse of the special terroir of Mâcon-Charnay-lès-Mâcon.

Maury is a “vin doux naturel” style wine created by adding fortifying spirits, such as brandy, to the wine in mid-fermentation. Selected from vines older than forty years and matured in new oak barrels, 100% Grenache.

The colour is deep and brilliant garnet red. The first nose reveals aromas of blackcurrant liqueurs and sweet spices. With aeration, notes of chocolate intermingled with roasting and stewed black fruits are revealed.

On the palate, cherry, cocoa and creaminess explode. All sublimated by an acidic balance and coated tannins. The subtle wood brings complexity to make this wine a real meal wine, from aperitif to dessert.

Enjoy with rich dessert, chocolate and caramel. blue-veined cheese (Fourme d'Ambert, Bleu de Gex...), chocolate fondant with a raspberry coulis. Or after a day's work with an ice cube.

Winemaking: After selecting our oldest plots, for their low yields and deep rooting in order to obtain extreme ripeness without stress for the plant, we carry out a traditional vinification with total destemming and maceration at low temperature until mutage. After 35 days of maceration, we keep the coule wine for the barrelling of our demi-muids for 12 months in a reducing medium (without oxygen).

Well structured, easy drinking Merlot with nice soft fruit. The wine has an aromatic nose with blackberry and vanilla notes. It is full bodied with a rich and spicy palate.

Slightly perfumed, ripe melon fruit on the nose. The palate is weighty and ripe but remains fresh and saline. After a well rounded attack, the palate is lifted by a crisp note typical of the wines from this terroir.

Grapes grown for this wine are only a stones throw from oyster leases in Etang de Thau bay. It is the prefect match for oysters, mussels and grilled fish. Or you can enjoy it on its own.

Produced traditionally by head winemaker Michel Lihrmann. Grapes are selected from vineyards with diverse soils - limestone, granite, gravel, marl and sandstone which impart different characters and styles to the overall blend. The grapes are harvested by hand and machine, depending on site. Pneumatic pressing, temperature controlled fermentation, no fining and light filtration before bottling, all to preserve the fruit and aromatics.

 Turckheim's Tradition range are benchmarks for the classic Alsace varieties. The Pinot Gris has lovely ripe pear and a touch of warm ginger spice on the nose and a medium bodied, just off-dry palate with a typically Turckheim finish - fresh and well-balanced.

It is well matched with meaty white fish such as monkfish, salmon or smoked trout and also with spicy Thai food.

Grapes are hand and machine harvested from 30 year old Sauvignon Blanc vines within a 22 hectare

vineyard on the hill of St Andelain on a mix of Silex and Kimmerigian clay. The estate undertakes

disease and pest control measures by maintaining natural balance ("lutte raisonnée") and works the soil

in a traditional way. Individual parcels are vinified separately. The grapes are gently pressed

pneumatically. Prior to fermentation in stainless steel tanks, the must is naturally clarified by cold

stabilisation and some of the grapes are macerated on the skins for a short period to maximise flavour

complexity. Either wild or selected yeasts are used, depending on conditions - indigenous yeasts are

believed to add more character. The fermentation is cool and slow over 3 weeks and the wine remains

on the fine lees. The gravity fed cellar is on two levels and all temperature controlled.

Linty and herbal, this is a concentrated wine yet with real elegance, complexity and power.

Best served chilled with shellfish, grilled white fish or chicken and soft cheeses or on its own as an aperitif.

This is the Famille Hugel signature wine. This dry Riesling stands out for its finesse and frankness and is the ideal partner to fish and seafood thanks to its wonderful balance and elegance.

Riesling is the Pinot Noir of white wines! It is our most demanding variety as it is also the latest ripening. Dry and elegant, it expresses itself best on our steepest slopes with the most complex minerality.

This elegant bottling couldn’t be more typical Alsace, with its aromas of apple, pear and citrus. With that underlying minerality and vibrant acidity, wines also don’t get much more food-friendly.

A refined, classic Sancerre with a subtle smokiness and aromas of bruised apple and honey. The palate is textural with layers of rich, lifted minerality and ripe citrus fruit, leading into the long, substantial finish. A great weight and depth to this wine which is well-balanced and has a lovely acidity throughout. Best to let breathe for optimal tasting experience.

Julien and Clément manage 20 hectares of vines across 60 different parcels, three quarters of which are Sauvignon Blanc and one quarter Pinot Noir. Soils are primarily the classic ‘terres blanches’ clay chalk, a heavier soil which gives the wines a ripe fruit character, and some 'caillottes', a form of limestone. A very modern, well-equipped, stainless steel cellar allows them to control the temperature of the wines during fermentation and later storage in tank prior to bottling to retain the freshness of the fruit characters. The grapes for this cuvée are a blend from all of the Raimbault's parcels of Sauvignon Blanc, and the wine is aged in stainless steel for ten months on its lees.

Good deep coloured red made from Cabernet Franc in the Loire Valley. The wine has a rich, full palate of red fruits and spices. The palate has plenty of grip and peppery notes with hints of liquorice.

Perfect with poultry, red meats and cheeses.

This Sauvignon Blanc is zesty with lively acidity, hints of passion fruit and gooseberry. There is a touch of richness on the palate which is well balanced by the vibrant acidity and finishes long and clean.

The grapes are sourced from the Anjou area in the Loire Valley, just south of the city of Angers. The vineyards are planted on two different types of soil: carboniferous rock and schist in the north and the visibly whiter, limestone-rich soils of the southern and western sides of the appellation.

Great served chilled as an aperitif or with salads, fish and sea foods.

This wine is produced from a blend of the finest must, low temperature fermentation with maximum protection from oxydation after heavy washing. Matured on fine lees for 4 to 8 months.

Very pale yellow in colour. It is expressive with plant and floral notes developing over aromas. A fresh, fruity and floral attack on the palate. A smooth, fresh and pleasant finish.

Serve as an aperitif, or with raw vegetables, fish and sea food.

Gently aromatic with notes of hawthorn followed by citrus and some exotic fruits, with a vibrant palate showing great freshness and depth of fruit flavour.

A ripe, dry wine with appealing peachy fruit on the nose and an intense, full flavoured palate with some classic green pepper notes and a satisfying finish.

The wine is 100% estate grown from 25 year old vines. The grapes are harvested at optimum maturity and fermented slowly for 3 weeks in stainless steel vats to retain freshness. The wine is matured on their fine lees until bottling in the following spring.

Vincent Leclair runs this family estate. 

The gathering of the grapes is carried out with a maximum of respect of the grain; a sorting is realised before the setting in press. It is then slowly pressed and a separation of the juices are made. A racking is carried out before fermentation. The control of the temperature is kept at 18 degrees, in order to preserve a maximum of aromas and smoothness with the end of alcoholic fermentation, the wine is separated from lees and sulphited slightly.

The vines resulting from selections “massales” and “clonages” have between 10 and 30 years. The density of plantation is 6500 vine stocks per hectare. The average out puts are 60 Hl/Ha, hardly one litre of grape juice per vine stock which is excellent for the Touraine appellation. 

This wine is bright, crisp and fruity with aromas of citrus and freshly cut grass. It is medium weight, dry but supple, nice with aperitif and the beginning of the meal.

This wine will match with shellfish, fish, charcuterie and asparagus. Has to be served fresh at 8°C and should be drunk young in the two following years.

Les Vignobles Foncalieu are a strong cooperative with some 650 winegrowers who have 4000 hectares of vines between them. They based in the heart of the Languedoc and they are focused on making quality wines.

A deep cherry coloured wine, this wine is fresh and delicious. The nose is dominated by notes of cherries and blackberries delicately combined with herbal touches of thyme and mint, bringing aromatic complexity. On the palate, black fruit flavours alongside silky tannins create a smooth and beautifully balanced wine. 

A wonderful unoaked wine with honeysuckle and apricot aromas and rich, almost unctuous palate that is somehow still dry, tangy and refreshing.

Light yellow in colour with hints of green. Fresh and dry with aromas of white flowers and exotic fruits. The palate is rich with white fruit flavours and well structured with a long lingering finish.

A delicious off dry style of Chenin Blanc with stony minerality, fresh walnuts and a hint of lime. The palate is honeyed with apple, ginger and a clean mineral finish. The sweetness is perfectly integrated and balanced, resulting in a refreshing wine with good length.

Food recommendations: Fantastic with goats cheese salad, honey roast ham, chicken cooked in any way, or almost any dish.
