Fermentation took place at cool temperatures using a selection of yeasts to elevate fruit expression and complexity. After resting on light lees, the wines were blended and prepped for bottling. This wine beautifully showcases Wairarapa Sauvignon Blanc, with the region’s cool, dry climate and free-draining soils proving perfect for the variety. Grapes from our home vineyard and select sites across the valley create a rich palette of flavours to blend. Through attentive vineyard management and naturally low yields, we achieve ripe, intensely flavoured fruit that defines this wine.
