It also goes very nicely with ripe cheeses, salami, ham, and pastrami. The Central Valley vitivinicultural zone extends from the Maipo Valley in the north to the Maule Valley in the south. The entire zone has good drainage, high fertility, and tremendous agricultural aptitude, especially for red grape varieties such as Cabernet Sauvignon, Carmenère, and others. The Mediterranean climate has warm summers with broad daily oscillations between daytime and night time temperatures, and cold, rainy winters that allow for good vine development. The soils are of alluvial origin with moderate depth, and good for agriculture. The grapes were hand picked in mid- April and submitted to a week-long pre-fermentation cold soak at 8ºC (46ºF) to extract fresh fruit characteristics. Alcoholic fermentation took place at 25º–28ºC with daily pump-overs. The new wine remained on its skins for a period, after which the free run wine was separated from its skins and allowed to undergo malolactic fermentation naturally. Part of this wine was aged in oak barrels for 6 months and later reblended to achieve a more complex character.Suitable for Vegetarians and VegansThis wine is Organic.

This is a traditional Châteauneuf-du-Pape serious and brooding and benefits from a little time to breath
and open up. The palate is complex with herby, tapenade flavours and ripe textured tannins balancing
the significant 15% alcohol which is expertly managed and integrated. Try with traditional roast lamb, lentil and vegetable moussaka and any rich hot-pot that heavily
features aromatic 'herbes de Provence'. The soils of the vineyard are made up of clay and chalk covered with a layer of the classic large
peebles ('galets') found in this area, which naturally keep yields low. The vines are over 60 years old
and situated near the plateau de Carbières (close to Château Montredon). Harvesting is by hand, with
selective sorting of the grapes. The grapes undergo a traditional long 'cuvaison' at quite high
temperature and with extended maceration on the skins, 21-24 days to extract plenty of colour, fruit
and tannins. This is followed by ageing for between 14-18 months in 'foudres' (large oak barrels), 70%

concentrated, powerful vintage quality red ports, selected primarily from the firm’s

and cellared. Tawny ports of age are blended across several vintages to maintain
quality and continuity of style, and thus show an “apparent”, or average, age on the
label rather than a vintage date.
As tawny ports age, they grow lighter in colour, as they throw their deposit in
the cask rather than in the bottle. Moreover, Fonseca cellars its aged tawnies in
the Douro rather than in Vila Nova de Gaia; the considerable difference in heat
and humidity between these two areas lends Fonseca’s tawny ports of age a very
distinctive “baked” richness reminiscent of butterscotch.

15 tones/hectares. Harvest takes place by hand in three batches between end of January when just ripe;
2 weeks later when just right; and one week after that which adds complexity. Use of selected yeast.
Maceration in press with carbonic for 4 hours. Alcoholic fermentation for 25 days at a temperature
between 13 ºC & 15 ºC. Non spontaneous malolactic fermentation.
A rich full bodied wine made in Heathcote, South East Australia by De Bortoli. Deep purple in colour with a crimson hue and a bouquet of ripe blackberries and dark fruits complemented with mocha oak, hints of spicy pepper and liquorice. 95%, Garnacha 5%. The vines in La Muga and Los Poyatos vineyards are mostly
very old Tempranillo bush vines. Really healthy grapes were harvested and after
slow fermentation in tank at controlled temperatures the wine was transferred
to barrel for 6 months. A mixture of a very few of new American oak barrels,
just to give the spice and toast aromas but mostly 2nd and 3rd year barrels of
predominantly French oak were used to promote the evolution of the wine from a
bright fruit bomb to something more mellow with a roundness and the
unmistakeable stamp of something good, a “Semi-Crianza” of sorts.
Ripe citrus and delicately tropical aromas lead to a textural, mineral palate with bright acidity, mandarin characters and appealing finish.Casa de Vila Nova is located in the North of Portugal. The vineyards are exposed to the Atlantic Ocean winds and influence. The grapes are harvested by hand.Try with Caesar or Tuna Nicoise salads or crab cakes.Suitable for vegansSuitable for vegetarians
