lose their colour too quickly. The first 10cm of each barrel is filled with grapes which are crushed by
foot, the barrel is then topped up with whole bunches and fermentation starts naturally after 2-3 days.
Since yeasts are an expression of the individual vintage and vineyard, no artificial yeasts are used. 3-4
times a day the pulp is trodden by foot to further extract colour and flavour. The wines are left in open
top fermenters until the cap sinks then decanted into 20-30% well-toasted new oak (a small percentage
compared to most). After 15-20 months the wine is racked, blended and lightly fined. Wines are not
filtered but checked by candlelight, then bottled directly from barrel by hand on a cask by cask basis.

slightly rustic yet moreish tannins and a persistent finish.

Stellenbosch. The attraction to this mature (planted in 1996), coastal, bush vine vineyard were the
cooler temperatures and small, naturally balanced and concentrated berries. Made by Waterkloof's
talented young Cellarmaster Nadia Barnard. Balanced grapes are hand harvested, fermented
spontaneously with wild yeast and then raised in large wooden casks (or 'foudre' en Francais). The
resulting wine therefore, is perhaps more 'Pino' than 'Tage'. No additions other than sulphur as a

had already been home to winemaking for around 250 years before they
arrived.It's still in the family's hands today, with son Martin overseeing the
estate alongside his brother Gregor, who supervises production in the vineyard
and winery. Their vineyards cover 27 hectares, with around two-thirds of the
area planted with white varieties (predominantly Riesling, Pinot Gris and Pinot
Blanc) and the rest with red varieties (Pinot Noir in the main).The terroir is
made up of seven different soil types: slate, red sandstone, granite,
limestone, loam, sand and 'muschelkalk' - a calcareous soil with substantial

A light straw coloured wine with a green hue. The wine is fresh and vibrant on the nose with fresh pear, white nectarine and grapefruit aromas leaping out of the glass with a hint of honeysuckle present. The palate is fresh, clean and refreshing having flavours that are complimentary to the aromas as well as a distinct Meyer lemon character. The grapes are harvested at night and it was fermented in stainless steel to retain the freshness of the varietal. A soft, ripe, easy drinking wine made from selected parcels of grapes from Languedoc, Burgundy and the Loire. There is plenty of jammy fruits and dark fruits such as blackcurrant in the blend and there is no oak used to preserve the freshness of the wine. A lively, red berry scented wine with a soft rounded palate.Try with sausage, game. beef stew, duck and cheeses.Suitable for vegans.Suitable for vegetarians.
A bright, vibrant wine with spicy red berry fruit such as blueberry and mulberry, exotic spice and creamy vanilla, evident ripe tannins and a long finish. This wine drinks well young but will improve over the next 6 to 8 years, gaining more complexity. The grapes were hand-picked into small baskets and taken to the cellar. A portion was
fermented in open bins and hand-punched four times a day. The rest was fermented in a
rototank. No commercial yeast was used as these grapes ferment well with their own yeast.
The wine matured in a mixture of French and American oak barrels for 14 months.
Approximately 30% was new wood.
