Cabernet Sauvignon Reserva Adobe Chile

Cabernet Sauvignon Reserva Adobe Chile

Attractive aromas of black currant and crunchy red fruit accompanied by notes spice. The palate is concentrated and very smooth with great crunchy red fruit character. The tannins are ripe and providewelcome grip and combined delicious acidity, leads to a balanced finish.FOOD MATCHThis wine is ideal with well-seasoned, strong-flavoured dishes, such as pasta with Bolognese sauce, stuffed cannelloni, grilled beef, pork, or poultry. It also goes very nicely with ripe cheeses, salami, ham, and pastrami. The Central Valley vitivinicultural zone extends from the Maipo Valley in the north to the Maule Valley in the south. The entire zone has good drainage, high fertility, and tremendous agricultural aptitude, especially for red grape varieties such as Cabernet Sauvignon, Carmenère, and others. The Mediterranean climate has warm summers with broad daily oscillations between daytime and night time temperatures, and cold, rainy winters that allow for good vine development. The soils are of alluvial origin with moderate depth, and good for agriculture. The grapes were hand picked in mid- April and submitted to a week-long pre-fermentation cold soak at 8ºC (46ºF) to extract fresh fruit characteristics. Alcoholic fermentation took place at 25º–28ºC with daily pump-overs. The new wine remained on its skins for a period, after which the free run wine was separated from its skins and allowed to undergo malolactic fermentation naturally. Part of this wine was aged in oak barrels for 6 months and later reblended to achieve a more complex character.Suitable for Vegetarians and VegansThis wine is Organic.

Carmenere Reserva Adobe Chile

Carmenere Reserva Adobe Chile

Purplish-red colour. Intensely fruity nose, with standout plum and redcurrant aromas and hints of toast and blackcurrants. Smooth, ripe, velvety tannins and good density. An enjoyable and persistent finish. FOOD MATCH Ideal served with barbecued red meats and stews, and well-seasoned white and game meats. Also excellent paired with pastas such as rigatoni and ripe cheeses.  The Colchagua Valley extends from San Fernando in the north to Chimbarongo in the south. The climate is Mediterranean, and the area receives winds from the south and morning fog. Springs are frost-free, and summers are very warm, which encourages proper ripening. Summers are hot but with cool night temperatures. The soils are medium to very deep, of alluvial origin, and have a silty-loam texture that allows for good vine development. The grapes were hand picked in late April and early May and submitted to a week-long pre-fermentation cold treatment at 8ºC (46ºF) to extract more fruit characteristics. Alcoholic fermentation took place at 25º–28ºC (77º–82ºF) with pumpovers determined  by daily tastings through the end of the process. A post-fermentation maceration followed, and then the wine was devatted, separating the free-run wine from the skins. Malolactic fermentation took place naturally. 20% of the wine was aged in French oak for 6 months and then blended for a more complex character.Suitable for Vegetarians and Vegans. This wine is Organic.

Chardonnay Reserva Adobe Chile

Chardonnay Reserva Adobe Chile

A clear, bright pale yellow in colour, with refreshing citrus aromas of grapefruit and lime that intermingle with subtle tropical fruit aromas, especially pineapple, and a touch of herbs. On the palate,it is a balanced, fresh and fruity wine, with velvety texture and a persistent, enjoyable finish.Ideal for serving with fish and shellfish, cooked with creamy sauces or butter. Also it is perfect accompanying pasta with seafood sauces and as aperitif, served with different cheese and dried fruits. Casablanca Valley can be identified by its closeness to the Pacific Ocean, influenced by the coastal breeze, which moderates temperatures. The land is basically formed by hills that increase in height asit goes east towards the Coastal Mountain Range. It has an alluvial origin, with sandy textures of high permeability, poor and shallow, which causes the valley to have low yields, compared to others. Thetemperatures are colder and templates, causing a slower ripening in the fruit and, in consequence, great character in flavour and aroma, for white varieties like Chardonnay and Sauvignon Blanc. The grapescome from vineyards that are approximately 12 years old in the Casablanca estate, trellised in simple vertical shoot position, with an average yield of 12 tons/ha. They were hand-picked into bins duringthe first week of March when they had reached the ideal state of ripeness. The grapes were transported to our Nancagua winery for vinification in stainless steel tanks at low temperatures with selectedyeasts, pumpovers, and delicate lees stirring to reach the desired final result. Prior to bottling the wine was fined with adjusted doses of bentonite and cold stabilized to prevent tartaric precipitations in thebottle.Suitable for Vegetarians and VegansThis wine is Organic.

Sancerre 'Mainbré' Domaine du Pré Semelé Loire

Sancerre 'Mainbré' Domaine du Pré Semelé Loire

A refined, classic Sancerre with a subtle smokiness and aromas of bruised apple and honey. The palate is textural with layers of rich, lifted minerality and ripe citrus fruit, leading into the long, substantial finish. Try with: fish, shellfish of course, white meats, salads and most vegetarian dishesThis wine is Organic.Julien and Clément manage 20 hectares of vines across 60 different parcels, three quarters of which are Sauvignon Blanc and one quarter Pinot Noir. Soils are primarily the classic ‘terres blanches’ clay chalk, a heavier soil which gives the wines a ripe fruit character, and some 'caillottes', a form of limestone. A very modern, well-equipped, stainless steel cellar allows them to control the temperature of the wines during fermentation and later storage in tank prior to bottling to retain the freshness of the fruit characters. The grapes for this cuvée are a blend from all of the Raimbault's parcels of Sauvignon Blanc, and the wine is aged in stainless steel for ten months on its lees.

It can also be served with white meats such as chicken seasoned with lemon, salads, and fresh cheeses. Best served at 7º–10ºCThe vineyards are distributed among three major sectors of the Coastal Mountain Range in Leyda, Lo Abarca, and Rosario, although newer areas are constantly appearing. The region´s mountainous topography, it is cool climate, and its distinctively thin and rocky soil, produce white wines known by its minerality and an intense acidity. Fundo Rosario vineyards are located 250m above sea level in the Lagunilla zone. The vines are clone 242, vertically positioned, drip irrigated, and primarily planted on hillsides. The mountainous topography of the region, its fresh climate and its particular rocky and thin soil, produce white wines famous for their minerality and intense acidity. The grapes are machine harvested at night to take advantage of the naturally low temperatures and transported to the winery, where they are deposited into a pneumatic press. After pressing, the must is decanted and prepared for alcoholic fermentation by adjusting the turbidity level to 100 NTU and inoculating the tank with selected yeasts. Fermentation begins at 15ºC and finished at 16º–17ºC. The tank is then chilled to aid in the decantation of the coarser lees, and after 2 days, the clean wine is racked to tanks for aging. During this time, its lees are maintained in suspension for 3 months, which encourages the development of fatty and aromatic compounds and delivery of greater complexity to the wine. Suitable for Vegetarians and Vegans. This wine is Organic.
