Intense and deep coloured with aromas of nuts, honey and wood. The full and soft body has a complex flavours of walnuts, dried fruits, coffee and caramel. consistent long lasting styles. The must is fortified, either to arrest fermentation
for a Malmsey or a Bual, or later in the fermentation process, in the case of
Sercial or Verdelho before undergoing its own very special maturation. The
Canteiro process is employed for all 10 and 15 year old Madeiras from H&H
where the wine is heated naturally in barrels over some months to enhance
concentration and consistency of the wine. Malmsey produces a rich sweet style
whilst still exhibiting delicious mouthwatering acidity.

undergoing its own very special maturation process. Made of predominantly
Tinta Negra Mole Grapes, harvest begins from mid-August due to the warm
southerly climate. A unique and highly sophisticated artificial Estufa process
is set up for the 5 year old wines, where temperatures rise to 45ºC before being
allowed to cool. This process takes 90 days and renders the wine completely
stable. It is then aged in oak casks for 5 years, prior to bottling.
Pale straw colour. This classic Fino has aromas of nuts, olives and the evocative aromas of patient ageing. Albariza. Picking takes place in early September. This Amontillado began life as a Fino. It spent 3
years under flor yeasts at 15%, but was then re-fortified to 17% abv and introduced to an Amontillado
Solera - without flor and therefore exposed to air. It spends approximately 5 years in this solera.
A rich amber colour. Fascinatingly complex with a light Christmas pudding nose of dried fruits, nuts,
and a well flambéed crust. The rich concentrated flavours and tangy acidity are softened by a

wines. The sherries are all from individual soleras. They are bottled without blending, cold
stabilization or filtration of any kind in order to preserve the subtlety, purity and distinctive aromas of
these premium wines. The products are all bottled in clear glass to show off the wonderful colour of
the wines. The classic Cream is produced from an Oloroso that has been aged for 6 years, and prior to
bottling 20% of young PX is blended into the wine.

This is a modern Chardonnay, on the nose there is an appealing salinity over toasted hazelnut

vineyard has its own AVA, San Bernabe and sits next to a chain of hills which separate the vineyards
from the Pacific coast. Chardonnay benefits from the cooler evenings this region enjoys helping to
maintain natural freshness. After careful selection fruit is pressed gently in a bladder press before
