Blandy's Duke of Cumberland Medium Rich Madeira
A deep, luscious, medium rich Madeira; tangy with crisp fruit, excellent with dessert and cheeses. Blandy's Duke of Cumberland is fined and does not require decanting. It is a superb accompaniment to dessert dishes, especially fruit, cakes, milk chocolate or custard puddings and soft cheeses. It has been bottled when ready for drinking and will keep for several months after opening. VINEYARDS Various quality vineyards grown at between 200m and 400m on the north of the island near São Vicente. VINIFICATION Blandy's Duke of Cumberland underwent fermentation on the skins with natural yeast at between 24°C - 26°C C in temperature controlled stainless steel tanks. After approximately 3 days, fortification with grape brandy takes place, arresting fermentation at the desired degree of sweetness. MATURATION Blandy's Duke of Cumberland was transferred to 'estufa' tanks where the wine underwent a cyclic heating and cooling process between 45°C and 50°C over a period of 3 months. After 'estufagem' the wine was aged for three years in American oak casks and then underwent racking and fining before the blend was assembled and bottled.

Cabernet Sauvignon Hayes Ranch California USA
This Cabernet Sauvignon comes from select vineyards in California with warm days and cool nights. These vineyards are characterized by a long growing season which helps develop ripe and round fruit flavours. Each vineyard was harvested and fermented separately in upright stainless steel fermenters. Rack and return, which is the process of draining all of the free-run juice off the cap and then returning the free-run juice back over the top of the fermenter, was performed twice daily. This method increases colour and tannin extraction and improves the mouthfeel through the integration of oxygen. This wine was aged for 12 months in neutral oak. Flavours of red cherry, anise, and a hint of vanilla, abound in this Cabernet Sauvignon. This wine is well balanced with medium tannins, a smooth mid-palate and a spicy, coffee finish.

This 3 Year Old Madeira starts life as fermenting must and is then fortified before undergoing its own very special maturation process. Made of predominantly Tinta Negra Mole Grapes, harvest begins from mid-August due to the warm southerly climate. A unique and highly sophisticated artificial Estufa process is set up for the 3 year old wines, where temperatures rise to 45ºC before being allowed to cool. This process takes 90 days and renders the wine completely stable. It is then aged in oak casks for 3 years, prior to bottling.An elegant, golden coloured wine with vibrant fruitiness and subtle nut hints, finishing with a tangy aftertaste.A versatile wine which can be drunk as an aperitif or with light desserts.
