South Australian Chardonnay, powerful yet refreshing, full of
stone fruit, green apple and flowers, with a slight brininess on the
tongue and notes of spice and hazelnut floating into the nostrils.Parcels of fruit are selected from vineyards in the Adelaide Hills.
The grapes underwent gentle crushing, temperature controlled
fermentation and basket pressing. 60% of the juice was fermented
in old French oak prior to bottling.Food matching:

Shiraz delivers deep plum, mulberry, and liquorice with
concentrated depth and velvety tannins. Grenache adds lush
raspberry, blueberry, and floral charm. White pepper notes from
both varieties shine in the cooler vintage, offering intrigue.
Mourvedre brings an elegant restraint, red fruits, dried herb hints,
and fine chalky tannins. A symphony of flavours and textures.The grapes used in this wine are mostly from very old bush vines
from around the McLaren Vale region.

Beautiful perfume with blackberry, blueberry and middle eastern saffron spice on the nose. Dusty, earthy aromas give way to layers of aniseed and black olive. The palate beautifully follows the nose; mouth filling, generous and not overtly sweet. One that can be cellared for many years.Small batches of grapes are gently crushed and then transferred to five tonne headed down open fermenters. Foot treading is undertaken two thirds of the way through fermentation. The wine is then basket pressed and a small amount of fine, fortifying brandy spirit is added, ending fermentation and reatining the sweet fruit richness of the style. The Vintage Fortified does not spend any time in wood prior to bottling.Perfect with chocolate desserts of blue cheese.Suitable for vegans.Suitable for vegetarians.
