Chenin Blanc Sula Vineyards Nashik, India
NEW IN STOCKThe vineyard is located in Nashik, to the north of Mumbai in the Western Ghats Mountains. The vines are grown at approximately 600 metres above sea level, where warm days give way to cooler nights, resulting in ripe fruit with balancing natural acidity. The climate here is mild in the winter with temperatures of approximately 10°C, rising to 35°C in the summer. Rainfall can be high, nourishing the vines throughout the growing season. The vines are grown in red soils with gravel and clay, which has a high iron content and offers good drainage.The grapes were gently whole bunch pressed. The must was slowly fermented for 25 to 30 days at controlled temperatures in stainless steel tanks, retaining the purity of fruit of the Chenin Blanc grapes. The wine was left to settle for approximately two months.Aromas of green apple and pear combine with tropical fruit flavours and mineral undertones. A notable acidity and hint of white pepper give this wine refreshing character.

Immediately appealing with good depth of flavour and underlying finesse that provides wonderful length and unfolding flavours - think of freshly cut hay and meadowsweet for the nose, crunchy greengages for the palate, and some candied peel / lemongrass for the final notes. Food match: An extremely versatile wine that can be enjoyed alone or with food – delicious alongside grilled fish (locally we would use zander), chicken in cream sauce (poulet à la crème), asparagus & mushroom risotto, fish chowder, a traditional roast chicken with all the trimmings, or even a cheese platter - particularly goat's cheese.Suitable for vegans.Suitable for vegetarians.Plots within the Mâcon-Charnay-lès-Mâcon appellation lie on the higher slopes of the Mont du Mâconnais, where soils are varied but limestone is prevalent. Here Chardonnay ripens under a Continental climate (typically cold winters followed by warm springs and almost Mediterranean sun in the summer). Once ripe, picking is both by hand and machine. Machine harvesting has the advantage of picking in the early hours of the morning before daylight when the temperature rises; hand picking is gentler and keeps whole bunches intact. After pressing and static settling the must is cooled to around 12°C to ensure a controlled fermentation. Once alcoholic fermentation is complete, wines are left to winter and undergo malolactic fermentation. With enviable priority access to the cellar in Mâcon-Charnay, Samantha tastes each individual tank (up to 20) to select a very personalised blend for GENETIE 'Les Piliers', combining three essential elements - the florals, the exotic and the mineral. The final blend is kept on fine lees until bottling, combining the warmth of southern Burgundy with the elegance and finesse of the special terroir of Mâcon-Charnay-lès-Mâcon.

Best served at 7º–10ºCThe vineyards are distributed among three major sectors of the Coastal Mountain Range in Leyda, Lo Abarca, and Rosario, although newer areas are constantly appearing. The region´s mountainous topography, it is cool climate, and its distinctively thin and rocky soil, produce white wines known by its minerality and an intense acidity. Fundo Rosario vineyards are located 250m above sea level in the Lagunilla zone. The vines are clone 242, vertically positioned, drip irrigated, and primarily planted on hillsides. The grapes are machine harvested at night to take advantage of the naturally low temperatures and transported to the winery, where they are deposited into a pneumatic press. After pressing, the must is decanted and prepared for alcoholic fermentation by adjusting the turbidity level to 100 NTU and inoculating the tank with selected yeasts. Fermentation begins at 15ºC and finished at 16º–17ºC. The tank is then chilled to aid in the decantation of the coarser lees, and after 2 days, the clean wine is racked to tanks for aging. During this time, its lees are maintained in suspension for 3 months, which encourages the development of fatty and aromatic compounds and delivery of greater complexity to the wine.
