The extra distance from the coast gives the wines a slightly fuller and richer character because of the warmer climate.The wine is a classic blend of Semillon and Sauvignon Blanc. Appearance: Bright ruby colour.Nose: Cherry, underwood and mild spices flavours.Palate: Subtle with a nice roundness. Tannins are silky and the finish dominated by the fruit.Serving temperature around 10-14 degrees.To be drunk now but it will age with no alteration for 2 to 3 years.This red wine will match perfectly with every red meat, along with tomato-based sauce.Personal crush to pair it with: Duck breast fillet slightly grilled, topped with a thyme juice. hot and dry mediterranean climate influence. Soils are sandy and silty as well as a chalk/
clay mix on the hillside vineyards.
The grapes are harvested, destemmed and then either hot macerated to extract colour a
beautiful dark red colour, and some are cold fermented to get the best possible varietal
fruit extraction. The fermentation is then conducted at controlled temperature with gentle
pumping overs to extract only the better tannins. The different pressings are then blended
in December and aged in stainless steel tank to preserve fruit and round tannins. No oak
treatment whatsoever. Just clean star bright fruit.
