The
Albariño grapes are hand harvested into 20kg cases. After selection they are pressed without skin
contact, and the must undergoes temperature-controlled fermentation in stainless steel.
Pale gold in colour with youthful highlights. On the nose, there are intense aromas of grapefruit which are balanced with a touch of minerality and floral notes. These are located in the Cafayate Valley in the very heart of the Calchaqui Valley, distinguished for being the highest wine region in the world. The climate here is very dry, with just 150mm of rain in an average year and a huge diurnal temperature change of around 20°C. The soils here are rocky, poor and sandy so the roots of the vines are forced to dig deep to find the vital nutrients and water they need, which in turn results in a huge concentration of flavour within the fruit.
A complex nose combining plum, mulberry, ripe strawberry and brown spice with delicate floral and
violet notes. Tannins are firm and pleasingly supported with plump fruit and a rounded texture, giving
a good lengthy finish.Perfect with wild boar sausages, venison, roast lamb or gamey stews.Suitable for vegans.Suitable for vegetarians.Made from Nebbiolo grapes cultivated around the town of Barolo in southern Piemonte. These are
trained on a low Guyot trellis at a density 4-5,000 vines/ha. The grapes were hand-harvested, de stemmed and then crushed to small fermenters, for around 12 days, with daily pumping-over. This
ensures good colour and flavour extraction, but avoids over extraction of the abundant Nebbiolo
tannins. The wine was drained off at dryness, and the skins transferred to a small press. After pressing
the wine was settled for two days, and then racked to stainless steel tanks for malolactic fermentation.
After three years maturation in 50hl Slavonian oak casks it was racked and bottled.
Delightful floral and brioche notes combine with zesty citrus fruit, honeysuckle and elderflower. It is delicate and well balanced, finishing with a soft fresh hint of sweetness.Food match - Fish, salads, a nice aperitif, soft cheese, Cornish Yarg and chicken pasta.
A classic Chardonnay from Southern Burgundy - fine buttery and floral notes on the nose and a wine
of substance and finesse on the palate. Some creamy textural notes up front reveal the discreet
presence of oak, whilst on the finish there is some underlying minerality and a hint of citrus zestiness
that provides long lasting flavours.

The vineyards are southwest facing and situated at altitudes of between 250 and 400m. The Piemonte low Guyot trellis system is used for the vines, which grow in a limestone-clay soil. Planting density is 4000 to 4500 vines per hectare. Grapes are hand harvested in the last week of September. Temperature controlled fermentation takes place in stainless steel (16- 18ºC) and the wine spends a couple of months on lees.
The nose offers floral aromas of jasmine, lychee, and honey notes. The floral notes reappear on the palate, along with apricot, and mandarin orange. Medium bodied with good concentration and a refreshing ripe fruit finish. The climatic characteristics of this valley include frost-free springs and warm summers that allow the grapes to ripen well. The Rapel Valley viticultural zone is located in Chile’s 6th Region, approximately 160 km (100 mi) south of Santiago and includes the sub-valleys of Cachapoal and Colchagua. The entire zone presents good drainage, high fertility, and tremendous agricultural aptitude. Its climate is sub-humid Mediterranean because the low, even hills of the Coastal Mountain Range to the west allow the cooling influence of the Pacific Ocean to penetrate the valley and moderate temperatures. It is highly influenced by the Pacific anticyclone, which results in a concentration of rainfall during the winter months. Precipitation averages 710 mm (28 in) per year. During the summer, the southern and south-western winds result in an ample temperature variation between daytime highs and night time lows. The maximum temperature in January reaches 32ºC (90ºF) and the annual average is 14ºC (57ºF). The grapes that went into this wine were handpicked in April, when the fruit had reached the desired level of ripeness. The fruit came from vineyards that are more than 22 years old the Totihue estate in Alto Cachapoal and the Los Pretiles estate in Alto Colchagua. The vines at both estates are vertically positioned and yield an average yield of 9 tons per hectare. Fermentation took place in stainless steel tanks with selected yeasts in our Maipo Valley winery. The process was carefully managed to maintain temperatures at 15º–17ºC (59º–63º), with gentle aeration and delicate lees stirring to reach the desired results. The wine was fined with bentonite and cold-stabilized before bottling to prevent tartaric precipitations in the bottle.

This innovative new Rosé style of port has been made by a new technique which extracts fresh fruity flavours and the pink colour from limited contact with the skins of the grapes. The result is a light and fresh Rosé port with lots of red berry flavours.
