These are located in the Cafayate Valley in the very heart of the Calchaqui Valley, distinguished for being the highest wine region in the world. The climate here is very dry, with just 150mm of rain in an average year and a huge diurnal temperature change of around 20°C. The soils here are rocky, poor and sandy so the roots of the vines are forced to dig deep to find the vital nutrients and water they need, which in turn results in a huge concentration of flavour within the fruit.

Serve at 18ºC in a Bordeauxstyle glass. The grapes for this wine come from organic vineyards of Los Morros and Los Robles in the Maipo Valley. Soils are alluvial, rich in minerals with good drainage and irrigated by water from the snow thaw. The grapes were hand picked. The Maipo zone has ideal conditions for growing Cabernet Sauvignon. The Maipo River regulates the temperatures naturally and prevents frost and extremes of heat and cold. The spring of 2013 was slightly colder than the historic average, followed by a summer with high temperatures, which accelerated ripening and prevented the delays that were initially predicted for the 2014 harvest. Rainfall in the Maipo Valley was concentrated in the winter months and reached approximately 250 mm, which is well below the nearly 450 mm recorded during the 2012–2013 season. The grape reception area includes a double selection conveyor belt that allows selection first at the bunch level and again after destemming. Vinification begins with a 4–5-day prefermentation cold soak at 8ºC followed by alcoholic fermentation in stainless steel tanks with native yeasts at 26ºC and a pumpovers program determined by enological criteria. Malolactic fermentation takes place naturally in tanks and barrels, where the wine is aged at controlled temperatures for 12 months. It is neither fined nor stabilized; it is just lightly filtered with a 1-micron cartridge filter priorto bottling.Suitable for Vegetarians and Vegans. This wine is Organic.

This is a traditional Châteauneuf-du-Pape serious and brooding and benefits from a little time to breath
and open up. The palate is complex with herby, tapenade flavours and ripe textured tannins balancing
the significant 15% alcohol which is expertly managed and integrated. Try with traditional roast lamb, lentil and vegetable moussaka and any rich hot-pot that heavily
features aromatic 'herbes de Provence'. The soils of the vineyard are made up of clay and chalk covered with a layer of the classic large
peebles ('galets') found in this area, which naturally keep yields low. The vines are over 60 years old
and situated near the plateau de Carbières (close to Château Montredon). Harvesting is by hand, with
selective sorting of the grapes. The grapes undergo a traditional long 'cuvaison' at quite high
temperature and with extended maceration on the skins, 21-24 days to extract plenty of colour, fruit
and tannins. This is followed by ageing for between 14-18 months in 'foudres' (large oak barrels), 70%
vats, 30% Burgundian pieces and casks.Suitable for vegansSuitable for vegetarians

Chill to just below cellar temperature (about 10ºC). In summer, serve at the end
of the meal as a refreshing alternative or try as one of the few dessert wines to
match chocolateDuring the January following each vintage, Fonseca sets aside a reserve of very
concentrated, powerful vintage quality red ports, selected primarily from the firm’s
own quintas and judged according to their ageing potential. These are placed in cask
and cellared. Tawny ports of age are blended across several vintages to maintain
quality and continuity of style, and thus show an “apparent”, or average, age on the
label rather than a vintage date.
As tawny ports age, they grow lighter in colour, as they throw their deposit in
the cask rather than in the bottle. Moreover, Fonseca cellars its aged tawnies in
the Douro rather than in Vila Nova de Gaia; the considerable difference in heat
and humidity between these two areas lends Fonseca’s tawny ports of age a very
distinctive “baked” richness reminiscent of butterscotch.

The perfect partner for mushroom-parmesan risotto. The Casablanca Valley is influenced by its proximity to the Pacific Ocean and its coastal breezes that moderate temperatures. The area ranges from soft rolling hills to higher hills toward the Coastal Mountain range in the east. The poor, sandy loam soils are alluvial in origin, relatively shallow and very permeable, resulting in yields which are generally low in comparison with other Chilean valleys. Temperatures are much cooler here, allowing the grapes to ripen very slowly to produce rich flavoured wines. The Casablanca Valley is influenced by the Pacific Ocean and the Humboldt Current, resulting in constant humidity and average temperatures of 25ºC in the summer and 14ºC in the winter. The spring of 2015 was cooler than average and the relative humidity was higher. This caused uneven budbreak and later ripening. An increase in rainfall forced an earlier harvest in April. The grapes are harvested into 400-kg bins and transported to the winery, where first the clusters and then the grapes (after destemming) are selected on a conveyor belt. Once in the tank, they undergo a pre-fermentation maceration for 3 days, followed naturally by alcoholic fermentation with native yeasts. During this stage, temperatures are kept at 24-26º C, with a gentle pump-over routine. A 2-3-day post-fermentation maceration is then carried out. Malolactic fermentation occurs spontaneously in stainless steel tanks and barrels. The wine is filtered through 1-micron membranes and then bottled. 70% of the wine is aged for 6 months in French oak barrels.Suitable for Vegetarians and Vegans. This wine is Organic.

The palate is full bodied, supple and well balanced with a long finish.Just before harvest the grapes, when the grapes are fully mature and are ready to be picked, the stems of the bunches are twisted so that no further nourishment reaches the grapes, thus inducing a natural drying of the grapes on the vine. The bunches are left for about 12 days and lose approximately 25 - 30% of their weight in water, concentrating their flavours before harvest. Perfect with roast red meats and mature cheeses.
