Made from Nebbiolo grapes cultivated around the town of Barolo in southern Piemonte. These are trained on a low Guyot trellis at a density 4-5,000 vines/ha. The grapes were hand-harvested, de stemmed and then crushed to small fermenters, for around 12 days, with daily pumping-over. This ensures good colour and flavour extraction, but avoids over extraction of the abundant Nebbiolo tannins. The wine was drained off at dryness, and the skins transferred to a small press. After pressing the wine was settled for two days, and then racked to stainless steel tanks for malolactic fermentation. After three years maturation in 50hl Slavonian oak casks it was racked and bottled.

The deeply coloured skins of old-vine Bobal grapes give this wine its intensity and soft tannins whilst the Syrah fleshes out the body with ripe black fruit characters.

The grapes come into the winery as whole bunches because the Vallets believe that destalked wines lose their colour too quickly. The first 10cm of each barrel is filled with grapes which are crushed by foot, the barrel is then topped up with whole bunches and fermentation starts naturally after 2-3 days. Since yeasts are an expression of the individual vintage and vineyard, no artificial yeasts are used. 3-4 times a day the pulp is trodden by foot to further extract colour and flavour. The wines are left in open top fermenters until the cap sinks then decanted into 20-30% well-toasted new oak (a small percentage compared to most). After 15-20 months the wine is racked, blended and lightly fined. Wines are not filtered but checked by candlelight, then bottled directly from barrel by hand on a cask by cask basis.

Fresh, plummy aromas with savoury, smoky notes. The palate is ripe and rich with vibrant fruit, slightly rustic yet moreish tannins and a persistent finish.

The grapes for False Bay Bush Vine Pinotage stem from a single vineyard of unirrigated bush vines in Stellenbosch. The attraction to this mature (planted in 1996), coastal, bush vine vineyard were the cooler temperatures and small, naturally balanced and concentrated berries. Made by Waterkloof's talented young Cellarmaster Nadia Barnard. Balanced grapes are hand harvested, fermented spontaneously with wild yeast and then raised in large wooden casks (or 'foudre' en Francais). The resulting wine therefore, is perhaps more 'Pino' than 'Tage'. No additions other than sulphur as a preservative. Grown, made and bottled in South Africa. Taken from the pristine soils of the Limestone Coast, this Cabernet Sauvignon shows the trademark bright fruit and generous flavours associated with the region. The cool air flow and long sunshine hours in this area provide extended ripening and hence complexity. Cabernet is well suited to this climate, developing intense black fruit aromas whilst maintaining lovely natural acidity and a sturdy tannin structure.

Ruby red in colour. The nose is intense, with a pronounced presence of fruity aromas such as cherries and strawberries as well as truffle and chocolate. Medium bodied, well balanced, and delicate, with particularly smooth tannins and rich acidity, resulting in a juicy and very pleasing wine with a persistent finish.

The grapes for this wine come from organic vineyards of Los Morros and Los Robles in the Maipo Valley. Soils are alluvial, rich in minerals with good drainage and irrigated by water from the snow  thaw. The grapes were hand picked. The Maipo zone has ideal conditions for growing Cabernet Sauvignon. The Maipo River regulates the temperatures naturally and prevents frost and extremes of heat and cold. The spring of 2013 was slightly colder than the historic average, followed by a summer with high temperatures, which accelerated ripening and prevented the delays that were initially predicted for the 2014 harvest. Rainfall in the Maipo Valley was concentrated in the winter months and reached approximately 250 mm, which is well below the nearly 450 mm recorded during the 2012–2013 season. The grape reception area includes a double selection conveyor belt that allows selection first at the bunch level and again after destemming. Vinification begins with a 4–5-day prefermentation cold soak at 8ºC followed by alcoholic fermentation in stainless steel tanks with native yeasts at 26ºC and a pumpovers program determined by enological criteria. Malolactic fermentation takes place naturally in tanks and barrels, where the wine is aged at controlled temperatures for 12 months. It is neither fined nor stabilized; it is just lightly filtered with a 1-micron cartridge filter prior
to bottling.

The grapes were hand picked in mid- April and submitted to a week-long pre-fermentation cold soak at 8ºC (46ºF) to extract fresh fruit characteristics. Alcoholic fermentation took place at 25º–28ºC with daily pump-overs. The new wine remained on its skins for a period, after which the free run wine was separated from its skins and allowed to undergo malolactic fermentation naturally. Part of this wine was aged in oak barrels for 6 months and later reblended to achieve a more complex character.

The story of Carmenère in Chile has been told frequently, with this Bordeaux grape being brought to Chile in 1850, where for over 140 years it was mistaken for Merlot until it was “rediscovered” by a French ampelographist in 1994. Now regarded as Chile's signature red grape, whereas in Europe it has never recovered from the phylloxera plague that swept Europe in the late 19th century and is now quite rare.

This wine was produced by Viña Luis Felipe Edwards, one of Chile’s largest family-owned wineries, who have been dedicated to producing wines of the highest quality since 1976. Their estate vineyards contain vines of up to 75 years old, with this wine made from grapes grown in the renowned Rapel Valley. LFE wines have consistently won awards from some of the most prestigious competitions and wine critics around the world. In addition, LFE has been awarded for being one of the best New World and Chilean wine producers, almost consecutively since 2012.

The fruit was vinified in Luis Felipe Edwards's winery in Nancagua using a blend of traditional and modern techniques, with stainless steel vats throughout.

Purplish-red colour. Intensely fruity nose, with standout plum and redcurrant aromas and hints of toast and blackcurrants. Smooth, ripe, velvety tannins and good density. An enjoyable and persistent finish.

The Colchagua Valley extends from San Fernando in the north to Chimbarongo in the south. The climate is Mediterranean, and the area receives winds from the south and morning fog. Springs are frost-free, and summers are very warm, which encourages proper ripening. Summers are hot but with cool night temperatures. The soils are medium to very deep, of alluvial origin, and have a silty-loam texture that allows for good vine development. The grapes were hand picked in late April and early May and submitted to a week-long pre-fermentation cold treatment at 8ºC (46ºF) to extract more fruit characteristics. Alcoholic fermentation took place at 25º–28ºC (77º–82ºF) with pumpovers determined  by daily tastings through the end of the process. A post-fermentation maceration followed, and then the wine was devatted, separating the free-run wine from the skins. Malolactic fermentation took place naturally. 20% of the wine was aged in French oak for 6 months and then blended for a more complex character.

This is a traditional Châteauneuf-du-Pape serious and brooding and benefits from a little time to breath and open up. The palate is complex with herby, tapenade flavours and ripe textured tannins balancing the significant 15% alcohol which is expertly managed and integrated. 

Try with traditional roast lamb, lentil and vegetable moussaka and any rich hot-pot that heavily features aromatic 'herbes de Provence'. 

The soils of the vineyard are made up of clay and chalk covered with a layer of the classic large peebles ('galets') found in this area, which naturally keep yields low. The vines are over 60 years old and situated near the plateau de Carbières (close to Château Montredon). Harvesting is by hand, with selective sorting of the grapes. The grapes undergo a traditional long 'cuvaison' at quite high temperature and with extended maceration on the skins, 21-24 days to extract plenty of colour, fruit and tannins. This is followed by ageing for between 14-18 months in 'foudres' (large oak barrels), 70% vats, 30% Burgundian pieces and casks.

A blend of Cabernet Sauvignon (40%), Syrah (40%), Cinsault (15%) and Carignan (5%) Grapes are grown on 15-20 year old vines on sandy limestone, with clay sub-soils. All four varietals were hand harvested and fermented in concrete vats for 10 days. Malolactic fermentation begins spontaneously, after which the wine was blended and then aged for 16 months in concrete vats.

Rapel Valley is located on the 6th Region, 160 km south to Santiago. This zone has good drainage,  excellent fertility and great characteristics for agriculture, especially for red varieties like Cabernet Sauvignon, Carmenère and Merlot. This valley has a Mediterranean climate, it has coastal influence because it limits with the Cordillera de la Costa, which is low. There’s a great concentration of rain during winter (710 mm average) and in summer this valley receives southern winds with morning mist. Summers are very hot and have big temperature fluctuation. The grapes were manually harvested in mid April. Vinification begins with a prefermentation cold soak at 8°C for a week in order to extract the fruit. Alcoholic fermentation takes place between 25°C and 28°C with a pump-over program determined by daily tasting. Malolactic fermentation takes place naturally in stainless steel tanks and 20% of the wine was aged in barrels for 6 months; after this the wine blended in order to obtain a more complex character.

Bodegas Juan Gil own over 500 hectares of vineyards, between 700 and 850 metres altitude, in the northwest of Jumilla: old bush vine Monastrell planted in chalky soils, and Shiraz grown in sandy soils on younger, trellised vines. Fermentation takes place in stainless steel, temperature controlled, and the juice maintains contact with the skins during this 10-day process.

From maritime vineyards in Marlborough’s south easterly extremes in the Blind River Valley. 100% estate grown grapes from the Dealul Uberland vineyard. The altitude here is around 250 m, with soil rich in iron oxide and loess on fractured limestone bedrock.

25% of the grapes were transfered directly into 1000 Kg bins without being destemmed then sealed and put through a carbonic macceration fermentation for 10 days in order to produce the strawberry fruit part of the blend. The remaining 75%was destemmed lightly crushed and then macerated and fermented normally at 25°C in stainless steel automated fermenters. Both wines were then seperately pressed and the noncarbonic maceration wine was lightly oaked for 2 months before blending.

A soft, ripe, easy drinking wine made from selected parcels of grapes from Languedoc, Burgundy and the Loire. There is plenty of jammy fruits and dark fruits such as blackcurrant in the blend and there is no oak used to preserve the freshness of the wine. A lively, red berry scented wine with a soft rounded palate.

Primitivo grapes ripen very early, which explains their name. Interestingly, just 20 days after the harvest, Primitivo vines produce new grapes, traditionally called 'second harvest' these younger bunches are used by the winemaker to increase the freshness and acidity of these bold wines, giving a wonderful balance to the rich berry fruit and spice character.

Aged for 3-months in American oak barrels and 6-months in steel.

Our Shiraz is sourced from ancient Victorian soils in order to achieve a wine with greater finesse, purity and structure as well as typical eucalypt flavours and saline finish associated with the area. Picked at night and crushed within an hour of picking before being sent to the fermentation tanks. The Shiraz grapes were fermented in temperature-controlled tanks maintained at 22 - 25ºC to avoid extracting any harsh tannins, with the fermentations pumped over to extract good colour. 20% of the final blend is barrel aged. The winemaker also added 5% Malbec at the end of the whole process - a sneaky technique that gives a mulberry fruit twist on the finish. 

Bright red in appearance with ripe raspberries and spice on the nose. The palate is juicy and plump with cherries and a gentle tannin finish.

The grapes are sourced from a mixture of trellised and bush vines in the Manzanares district of La Mancha- renowned for it’s limestone soils.

The wine is fermented in stainless steel tanks at controlled temperature and then spends 18 months in American and French oak barrels and a further 6 months in bottle before releasing.

Intense cherry red colour, ripe black and red fruits, spices, liquorice and chocolate aroma. Round and well-balanced with fruity notes.

Aged in used French and American oak barrels for 6 months.

Tempranillo 95%, Garnacha 5%. The vines in La Muga and Los Poyatos vineyards are mostly very old Tempranillo bush vines. Really healthy grapes were harvested and after slow fermentation in tank at controlled temperatures the wine was transferred to barrel for 6 months. A mixture of a very few of new American oak barrels, just to give the spice and toast aromas but mostly 2nd and 3rd year barrels of predominantly French oak were used to promote the evolution of the wine from a bright fruit bomb to something more mellow with a roundness and the unmistakeable stamp of something good, a “Semi-Crianza” of sorts.

Beautiful perfume with blackberry, blueberry and middle eastern saffron spice on the nose. Dusty, earthy aromas give way to layers of aniseed and black olive. The palate beautifully follows the nose; mouth filling, generous and not overtly sweet. One that can be cellared for many years.

Small batches of grapes are gently crushed and then transferred to five tonne headed down open fermenters. Foot treading is undertaken two thirds of the way through fermentation. The wine is then basket pressed and a small amount of fine, fortifying brandy spirit is added, ending fermentation and reatining the sweet fruit richness of the style. The Vintage Fortified does not spend any time in wood prior to bottling.

Vita Libera is produced with quality Primitivo wine, carefully selected for having the perfect attributes to be dealcoholized with the best result. Bright ruby in colour. Vita Libera Primitivo has a pronounced fruity bouquet reminiscent of crispy red fruits, such as berries. The palate is well-balanced, smooth with a persistent finish.

The Primitivo is dealcoholized using the "vacuum evaporation technique". With this method it is possible to remove the alcohol at a temperature of 20C, preserving the freshness and the varietal characteristics of the wines.

Serve at 12-14-°C to maximise the aromatic expression. This is a versatile drink, pairing well with a great variety of dishes or enjoyed on its own as an aperitif.

Bright ruby red in colour with delicate aromas of crunchy red fruit and cassis. Dry on the palate, with balanced acidity with a hint of violets on the finish.

The hue of the medium dark purple Zinfandel, displays all the attractive qualities of a young wine. Pleasant ripe red currants and fresh strawberry immediately come to mind followed by caramelised sugar and toast. The savouriness of bright red fruits are enveloped in the succulent juicy wine which possesses soft, supple tannins.

Serve with full flavoured meat dishes such as spare ribs or beef brisket or with tomato based pasta dishes.
