The winery select fruit from vines with generous canopies allowing natural fruit ripening. The fruit is picked and gently pressed and the juice allowed to settle naturally before being filtered. The wine is cold fermented to retain fresh fruit characters.

A classy sparkling wine with aromas of honeysuckle, citrus zest and fresh strawberries. The palate is complex with delicate fruit flavour, fine creamy texture and a refreshing natural acidity. The finish is dry and fresh with lingering flavours of citrus and nougat.

The grapes for this wine were all hand picked. After fermentation the wine is aged on its lees in bottle for an extended time before release.

The winery was established in 1986 and has been owned by the Hill-Smith family since 1998. 

Very pale straw yellow and an intense, fine and persistent sparkling wine. Intensely fruity aroma with clear hints of ripe golden apple, exotic fruit salad and citrus fruits; a persistent flowery aroma reminiscent of acacia and wisteria flowers in the style of Prosecco.

Whole grapes are put into the pneumatic press for soft pressing. The resulting must, after a first racking, is placed into controlled temperature tanks at 0% where it remains until it is used for the production of 0% sparkling. CO2 is added gently to ensure a fine perlage.

Prosecco di Valdobbiadene Spumante is made from Glera grapes cultivated in selected vineyards in the district of Valdobbiadene near the town of Conegliano in the region of Veneto. Produced using the Charmat method of sparkling wine production with secondary fermentation taking place in tank. (The Champagne/traditional method is not used for Prosecco because the long ageing period would rob the wine of its freshness). 

Fresh and gently fruity fizz from north east Italy with citrus and green apple aromas. Delicate and lively on the palate with ripe, lightly grapey fruit, zesty acidity and a clean, refreshing finish.

Serve chilled as an aperitif or with peach juice as a Bellini.
