Félicette is produced in the South-West of France, between Narbonne and Beziers, with its hot and dry mediterranean climate influence. Soils are sandy and silty as well as a chalk/ clay mix on the hillside vineyards.

The grapes are harvested, destemmed and then either hot macerated to extract colour a beautiful dark red colour, and some are cold fermented to get the best possible varietal fruit extraction. The fermentation is then conducted at controlled temperature with gentle pumping overs to extract only the better tannins. The different pressings are then blended in December and aged in stainless steel tank to preserve fruit and round tannins. No oak treatment whatsoever. Just clean star bright fruit.

A classic Sancerre with crisp, crunchy grapefruit and lime citrus flavours and a gently herbaceous element adding complexity. There is a mouthwatering, saline minerality to the long finish.

Julien and Clément manage 20 hectares of vines across 60 different parcels, three quarters of which are Sauvignon Blanc and one quarter Pinot Noir. Soils are primarily the classic ‘terres blanches’ claychalk, a heavier soil which gives the wines a ripe fruit character, and some 'caillottes', a form of limestone. A very modern, well-equipped, stainless steel cellar allows them to control the temperature of the wines during fermentation and later storage in tank prior to bottling to retain the freshness of the fruit characters. The grapes for this cuvée are a blend from all of the Raimbault's parcels of Sauvignon Blanc, and the wine is aged in stainless steel for ten months on its lees.

Greenish-yellow in colour and expressive on the nose. Very fruity aromas of grapefruit, pineapple, and gooseberries with notes of green chili  and white pepper. The palate features dense body with good acidity and silky texture.

The high acidity and aromatic persistence in this wine make it an excellent aperitif as well as an ideal companion to shellfish and raw or cooked white fish. It can also be served with white meats such as chicken seasoned with lemon, salads, and fresh cheeses. Best served at 7º–10ºC

The vineyards are distributed among three major sectors of the Coastal Mountain Range in Leyda, Lo Abarca, and Rosario, although newer areas are constantly appearing. The region´s mountainous topography, it is cool climate, and its distinctively thin and rocky soil, produce white wines known by its minerality and an intense acidity. Fundo Rosario vineyards are located 250m above sea level in the Lagunilla zone. The vines are clone 242, vertically positioned, drip irrigated, and primarily planted on hillsides. The mountainous topography of the region, its fresh climate and its particular rocky and thin soil, produce white wines famous for their minerality and intense acidity. The grapes are machine harvested at night to take advantage of the naturally low temperatures and transported to the winery, where they are deposited into a pneumatic press. After pressing, the must is decanted and prepared for alcoholic fermentation by adjusting the turbidity level to 100 NTU and inoculating the tank with selected yeasts. Fermentation begins at 15ºC and finished at 16º–17ºC. The tank is then chilled to aid in the decantation of the coarser lees, and after 2 days, the clean wine is racked to tanks for aging. During this time, its lees are maintained in suspension for 3 months, which encourages the development of fatty and aromatic compounds and delivery of greater complexity to the wine.

Many connoisseurs agree that 7°C is the best serving temperature for Sauvignon Blanc, but we are a chilled bunch, so serve it the way you enjoy it!

South Australian Chardonnay, powerful yet refreshing, full of stone fruit, green apple and flowers, with a slight brininess on the tongue and notes of spice and hazelnut floating into the nostrils.

Parcels of fruit are selected from vineyards in the Adelaide Hills. The grapes underwent gentle crushing, temperature controlled fermentation and basket pressing. 60% of the juice was fermented in old French oak prior to bottling.

Food matching: This wine is great on its own and also goes down a treat with fresh fish, crunchy salads or a roast chook ( Chicken or Fowl ).

Shiraz delivers deep plum, mulberry, and liquorice with concentrated depth and velvety tannins. Grenache adds lush raspberry, blueberry, and floral charm. White pepper notes from both varieties shine in the cooler vintage, offering intrigue. Mourvedre brings an elegant restraint, red fruits, dried herb hints, and fine chalky tannins. A symphony of flavours and textures.

The grapes used in this wine are mostly from very old bush vines from around the McLaren Vale region.

Food matching: Easily matched with Entrecote & grilled pork chops but also worth trying with lamb and a classic pasta Bolognese!
