Intense red with a bright purple edge. Aromas of ripe plum, blue fruits, dark choc and hints of cedar. The concentrated yet supple palate shows more blue fruits, rich dark chocolate, hints of spice and elegantly structured tannins. Harvest is carried out in the cool of the morning. Fruit is then carefully destemmed into Potters and fermented at 25-30°C over 7-8 days. Pressed, racked and matured in new and older Hogshead barrels for 12 months. 40% was kept in tank to retain those lovely fruits to blend with the oak matured portions.
